CHEMICAL STERILIZATION OF HONEY
The present application relates to the process of using parecetic acid and/or performic acid with heating to create a sterilized product. Green tea polyphenols may be used to inhibit spore germination. Honey is one product that may benefit from this process. Other products that may benefit from this process include pickled foods, condiments, salad dressing, marinades, apple products, strawberry products, and raspberry products. Medications containing honey for stomach ulcers may benefit from this sterilization process. Cosmetics containing honey may also benefit from this process.

Low foaming, highly acidic peroxycarboxylic acid sanitizing compositions are disclosed as having both improved antimicrobial efficacy in comparison to conventional peroxyoctanoic acid and peroxyacetic acid compositions for sanitizing applications. The compositions include a combination of a low-foaming surfactant and an aluminum sulfate (or other metal salt) defoaming agent that is compatible with the highly acidic peroxycarboxylic acid sanitizing compositions. In particular, the sanitizing peroxycarboxylic acid compositions are also low odor and low/no VOC dual functioning acid wash and sanitizing compositions.

METHOD, DEVICE, AND SYSTEM FOR DISINFECTION
Embodiments of the invention relate generally to disinfection and, more particularly, to methods, devices, and systems for disinfection of a space. In one embodiment, the invention provides a disinfecting system comprising: a disinfecting composition; and a device for producing a fog of the disinfecting composition, the fog comprising liquid droplets having diameters between about 0.5 micron and about 20 microns. In some embodiments, the invention includes a dehumidifying device for removing the fog of the disinfecting composition from the space.
