AUTOMATED TRACKING SYSTEM FOR BAKING PANS AND TRAYS
A system for tracking and managing leaking pans and trays, comprising a set of baking pans or trays that includes a plurality of individual baking pans or trays, each of which includes a unique identification tag positioned thereon, wherein each unique identification tag includes information about the individual baking pan or tray on which the identification tag is positioned; and a data acquisition system that includes at least one sensor mounted in proximity to a production line conveyor for detecting baking pans or trays positioned on the conveyor; at least one tag-reading device that is activated when the at least one sensor detects a pan or tray on the conveyor, wherein the at least one tag reading device reads information from each identification tag and transmits the information to a controller; and a controller that includes hardware and software that controls the at least one sensor and the at least one tag reading device, and that receives, processes, and outputs the information read from the identification tags on the baking pans or trays.
FLAT BAKING TRAY FOR BAKING FOOD WITH A SYSTEM FOR COMPENSATING FOR THE DIFFERENCES IN THERMAL EXPANSION OF THE COMPONENTS THEREOF
Disclosed is a baking tray for baking food, including a sheet connected to a tubular peripheral frame substantially shaped like a rectangular frame. The coupling between the sheet and the frame is obtained so as to allow an at least partial recovery of the differences in thermal expansion between the sheet and the frame. Namely, the connection between the edge of the sheet and the tubular elements of the frame is obtained by folding the sheet on itself in a U, at the edge, and fitting the latter on substantially L-shaped section bars suitably connected to the tubular elements of the frame, respectively, by electric spot welding.

The invention relates to a device that comprises a carriage and an oven including a baking chamber, a plurality of stacked baking soles and means for heating said soles. The device is characterized in that it includes a plurality of nets made of a heat-resistant flexible material and includes at least one cell for receiving said food products, in that the carriage is arranged for inserting said nets into the oven, for withdrawing same and for positioning same opposite a sole, and in that it includes means for vertically moving the soles and/or the nets relative to each other so as to place said soles and said nets in an active position in which the bottom of the cells of a net is in contact with the baking sole located opposite and is capable of deformation upon contact with said sole so as to bake said products by induction, and in a passive position, in which the bottom of said cells is separated from the sole located opposite.
