Refined Cereal-Based Beverages
The present invention relates to methods for preparing cereal-based beverages. Particularly, the present invention provides, for example, methods for steeping and germination of cereal grain under continuous aeration. The present invention also provides for wet milling of germinated cereal grains and direct transfer of the germinated grain, without drying, to the brewery for further processing. Compared to current methods the methods of the present invention significantly reduces water consumption, energy consumption and transport need.

Sport beverages and methods for their production
The present invention relates to a method for producing a sport beverage, comprising the steps of providing malt and/or unmalted grains, providing mashing liquor produced from spent grains, processing the malt and the mashing liquor to obtain a wort, fermenting the wort by using a yeast and optionally, blending with flavour(s) and/or vitamin(s); and/or adding of sugar(s). The present invention further relates to a sport beverage obtained by said method, wherein said sport beverage is non-alcoholic or has an alcohol content of less than about 1.2 vol-%, preferably less than about 0.5 vol-%. The present invention also relates to the use of the sport beverage before and/or after physical activities.
Sport beverages and methods for their production

METHOD OF PREPARING CEREAL EXTRACT
The invention relates to a method of preparing a wort from cereals, comprising the steps of: providing a grist comprising non-malted cereals; preparing a mixture by contacting the grist with water and with an alpha-amylase, a protease and a filtration aid enzyme, to yield a mash after incubation; incubating said mixture at 45-55 C. for a period of 10-30 minutes, at 60-70 C. for a period of 20-40 minutes and at 80-90 C. for a period of 5-15 minutes; filtering the mash to obtain a liquid wort; and collecting the wort.
METHOD OF PREPARING CEREAL EXTRACT
The invention relates to a method of preparing a wort from cereals, comprising the steps of: providing a grist comprising non-malted cereals; preparing a mixture by contacting the grist with water and with an alpha-amylase, a protease and a filtration aid enzyme, to yield a mash after incubation; incubating said mixture at 45-55 C. for a period of 10-30 minutes, at 60-70 C. for a period of 20-40 minutes and at 80-90 C. for a period of 5-15 minutes; filtering the mash to obtain a liquid wort; and collecting the wort.
Low Alcohol or Alcohol Free Fermented Malt Based Beverage and Method for Producing It
The present invention concerns an alcohol free or low alcohol fermented malt based beverage having an alcohol content of not more than 0.7 vol. %, characterized by a relationship yA x.sup.b wherein A=0.25 and b=1.5, and wherein x is the ratio between unfermentable over real extracts, wherein the unfermentable extract is the value of the real extract less the total content of real sugars, which consist of fructose, maltose, glucose, maltotriose, and saccharose, and y is the ratio between the combined content of maltopentaose, maltohexaose, and maltoheptaose over the total amount of main sugars, wherein the main sugars consist of fructose, maltose, glucose, saccharose, maltotriose, maltotetraose, maltopentaose, maltohexaose, and maltoheptaose. It also concerns a method for producing an alcohol free or low alcohol fermented malt based beverage comprising Preparing a wort (23) of fermentability not higher that 29%, preferably, not higher than 25%, more preferably at most 20%; and Fermenting the thus prepared wort in a fermentation tank (4) by a cold contact process.
Low Alcohol or Alcohol Free Fermented Malt Based Beverage and Method for Producing It

SYSTEMS AND METHODS FOR MAKING SPENT GRAIN DOUGH PRODUCTS
The invention provides methods for the production of dough and bread products made at least in part of spent brewer's grain. The spent grain is removed from a brewing or distilling process, dried, frozen, and then further processed into a spent grain dough product. More specifically, the invention relates to the systems and methods for making frozen pizza dough balls composed at least in part of grain products that have been used in the process of brewing beer or distilling sprits such as whiskey.
