The present invention provides products and methods for improving the tolerance of a dough in bakery and patisserie products. More specifically it provides sourdough products obtained through the fermentation of cereals by specific strains of bacteria. The products obtained by using said sourdough products are characterized by having a strengthened dough resulting in bakery and patisserie products with improved physical properties and taste.

There are provided novel synthetic stool preparations comprising bacteria isolated from a fecal sample from a healthy donor. The synthetic stool preparations are used for treating disorders of the gastrointestinal tract, including dysbiosis, Clostridium difficile infection and recurrent Clostridium difficile infection, prevention of recurrence of Clostridium difficile infection, treatment of Crohn's disease, ulcerative colitis, irritable bowel syndrome, inflammatory bowel disease, and diverticular disease, and treatment of food poisoning such as salmonella. Methods of preparation and methods of use of the synthetic stool preparations are also provided.

A method of producing butyric acid, comprising: (a) providing a microorganism co-culture system comprising an air-tight container and the following (1) to (3) contained in the air-tight container: (1) a substrate, comprising a saccharide; (2) at least one of a first strain and a second strain, wherein the first strain is able to fix a carbon oxide and the second strain is able to fermentatively metabolize an amino acid, and wherein the first strain produces a first metabolite in the fermentation, the second strain produces a second metabolite in the fermentation, and each of the first metabolite and the second metabolite comprises acetic acid; and (3) a third strain, being able to metabolize the saccharide, the first metabolite and the second metabolite in the fermentation to produce butyric acid and a metabolic byproduct in fermentation, wherein the metabolic byproduct comprises carbon oxide and hydrogen, wherein, when the second strain is present in the co-culture system, the substrate further comprises an amino acid; and (b) keeping the microorganism co-culture system under an anaerobic atmosphere to perform the fermentation and providing a fermentation product.

A method and system for high rate acidification and organic solids solubilization of feedstocks such as municipal source separated organics, municipal sewage sludge, and various industrial organic wastes are disclosed. The method and system feature a completely mixed bioreactor containing hydrogen-producing microorganisms, a crossflow membrane unit or membrane module located downstream of the bioreactor, a storage tank for receiving concentrated microorganisms from the membrane unit or module, and a connection that recirculates desired quantities of biomass from the storage tank to the bioreactor. This configuration decouples the solids residence time (SRT) from the hydraulic retention time (HRT) and results in a high solubilization rate.
