A use of a lactic acid bacterium, Lactococcus lactis subsp. lactis diacetylactis (CNCM No. I-4404) or a Lactococcus lactis subsp. lactis diacetylactis (CNCM No. I-4405) for the manufacture of butter-cream flavouring milk ingredients containing at least one of diacetyl, acetoin and 3,4-dihydroxy-3,4-dimethyl-2,5-hexanedione.
ANTIMICROBIAL STRAIN
The present invention belongs to the field of the biotechnology, and relates to novel Streptococcusbacteria which are useful as antimicrobial agents, particularly against caries and periodontal disease. The invention relates to compositions and functional food comprising the novel bacteria. In particular, the present invention relates to a novel bacterial strain, deposited at the Coleccin Espaola de Cultivos Tipo, with accession number CECT 9174, which has proven to be useful in the prevention and treatment of caries and periodontal disease.
Phage insensitive streptococcus thermophilus
Bacteriophage Insensitive Mutants (BIMs) of three Streptococcus thermophilus parent strains were generated and characterized for phage sensitivity, sedimentation rate, cell chain length, phage adsorption and CRISPR loci alterations. Several BIMs showed an altered sedimentation phenotype as well as an increase cell chain length, reduced phage sensitivity, reduced phage adsorption and 100% identity in three CRISPR loci. The results show that the derived BIMs have become phage-resistant through a mechanism other than CRISPR.

Provided are Enterococcus lactis, a drug for preventing or treating tumor, and use thereof, relating to the technical field of biomedicines. Novel Enterococcus lactis is separated and chosen, and the Enterococcus lactis has an important influence on the effect of tumor immunotherapy for cancer patients. Gut microorganisms and immune cells can interact with each other to jointly regulate the human immune system. The provided Enterococcus lactis can induce the differentiation and maturation of iDC (immature DC) cells, and mature DC can effectively activate T cells and increase the infiltration of tumor infiltrating lymphocytes having anti-tumor activity, thereby killing tumor cells. In addition, the provided Enterococcus lactis can induce the differentiation of M0 type macrophages into M1 or M2 type cells.
