A PASTA PRODUCT PRODUCTION DEVICE AND METHOD OF USE THEREOF
A pasta product producing device and method of use is disclosed. The device includes a base and motor unit; a container having a mixing portion and an extrusion portion; a flour dispensing assembly; a water dispensing assembly; an additive dispensing assembly; one or more sensors operatively associated with the mixing portion of the container for measuring selected volumes of flour, water and the one or more additives dispensed; a mixing and extrusion assembly for mixing and extruding a pasta product; a user interface to allow a user to input a desired pasta product; and a controller operatively associated with the user interface and the one or more sensors and configured to autonomously control operation of the motor, the mixing and extrusion assembly, the flour dispensing assembly, the water dispensing assembly and the additive dispensing assembly to produce the desired pasta product.

Apparatus and method for curled extrudate
A shaping assembly for producing a discrete spiral shaped food product includes a die that defines at least one aperture that is centered on an aperture axis. The at least one aperture extends to an aperture exit and allows for the movement of a stream of food mass through the aperture and out the aperture exit. A shaping tool includes at least one slicing blade that is disposed over at least a portion of the aperture exit to slice the stream of food mass into a plurality of food mass portions. A coupling arrangement engages the shaping tool to facilitate rotation of the slicing blade to spin the plurality of food mass portions into a spiral shaped stream of food mass. The slicing blade simultaneously slices and spins the stream of food mass to create the spiral shaped stream of food mass. A crimper is used to cut the spiral shaped stream of food mass into the discrete spiral shaped food products.
Vane Powered Rotor System
A vane powered rotor system or a vane powered rotor may utilize a servomotor and may gently extract, meter, and extrude a product under low pressure. The system or rotor may maintain original product properties of the product during portioning or separation of the product. The system or rotor may include a first group of cavities that may become filled with the product, as the vane powered rotor continuously rotates. The product may be discharged through a second group of cavities opposite the first group of cavities. The first and second group of cavities may be arranged laterally about opposing sides of the vane powered rotor.
Device for gently producing a pastry strand
The invention relates to a device for the dough-saving production of a dough strand (28) from a dough mass (6) found in a container (5), for which the container (5) has an outlet (27) at the bottom. The container (5) is made to rotate about its axis (7). The outlet (27) is edged by the container (5) and by a cutting disk (13) forming at least a part of the base of the container (5). The cutting disk (13) is also made to rotate in the same direction as the container (5).
Device for gently producing a pastry strand
The invention relates to a device for the dough-saving production of a dough strand (28) from a dough mass (6) found in a container (5), for which the container (5) has an outlet (27) at the bottom. The container (5) is made to rotate about its axis (7). The outlet (27) is edged by the container (5) and by a cutting disk (13) forming at least a part of the base of the container (5). The cutting disk (13) is also made to rotate in the same direction as the container (5).
VARIABLE CONTOURED ROUNDING BAR, DEVICE AND METHOD OF USING SAME
A rounding device and method of rounding that provides improved rounding of semi solid material portions by introducing changes or variations in the contours or profiles of rounding bars to produce one or more changes in the axis of rotation of the semi solid material portion along the working length of the one or more contoured rounding bars and round the surfaces of the semi solid material portion with greater uniformity and consistency. By changing the axis of rotation of the semi solid material portion in the working length of the variable contour rounding bar one can improve the rounding and avoid blemishes and deformities that occur to the surface of the semi solid material portion in existing devices.
Variable speed profile extrusion portion cutting head and control system
The invention is directed to a foodstuff extrusion portioning device and more specifically a cutter head assembly on such an extruder having a servo motor, a cutter shuttle coupled to a cutting element, a controller and being programmed via a product variable to provide a velocity profile. The cutter in the velocity profile has a first velocity and it reduces speed to a second velocity and goes more slowly through the last portion of the foodstuff. The at least two velocities being fully programmable and the controller can provide for instantaneous and additional programmed velocities throughout the cutting profile. The cutter further providing tilt control so it can drop the portion at the moment the portion detaches from the extruded foodstuff stream. It cuts and/or breaks off portions in a far more uniform and controllable manner to more accurately portion and better place the cut portions. This also provides the portion with minimal residual energy pushing it forward as it drops through the effect of gravity and the cutter can be used so as to further direct and push the portion downward so as to optimally place it.

Apparatus and method for preparing spherical shaped products
Apparatus and process for producing and discharging spherically shaped products from a pasty material. The apparatus includes a feed device for moving the pasty material along a conveyor path, a portioning device connected downstream of the feed device for shaping the pasty material into balls, and a transport device for discharging the balls produced by means of the portioning device. The portioning device has an outlet opening having a plurality of outlets for the balls to be shaped, arranged in mutually juxtaposed relationship so that the delivered products touch each other or are arranged in closely mutually juxtaposed relationship, and the portioning device and the transport device are so arranged relative to each other that regions of the transport device in the transport direction provide an abutment function for the balls which are to be oriented in mutually juxtaposed relationship in a row substantially transversely relative to the transport direction.
