Roll-forming device for food dough piece and roll-forming method therefor
A rolled food dough having a good shape is stably produced. The rolled food dough is arranged on a conveyor in an orderly manner. A roll-forming device and method having high production capacity are provided. The downstream end portion PL of the food dough piece P is deflected by a middle-speed conveyor 1 and a high-speed conveyor 3 facing each other in an up-down direction, folded and adhesively pressed between a following low-speed conveyor 2 and the high-speed conveyor 3 to form a rolling core PA, and rolled due to a speed difference between the facing conveyors.
Product rolling arrangement
An arrangement for rolling a product is disclosed. The arrangement includes a drive conveyor, and a rolling assembly positioned above the drive conveyor. The rolling assembly includes: an arm adapted to be driven between (i) a rolling position and (ii) a release position. A product turner is attached to the arm, such that in the rolling position, an end of the product turner extends into a conveying path of the drive conveyor.

SCORED PRETZEL BITE APPARATUS AND METHOD
A method of making a soft pretzel bite includes cutting a series of transverse slots on one lateral side of a dough strip, curling the transverse slotted dough strip into a respective rolled dough strip, exposing each transverse slot, and transversely cutting each rolled dough strip into dough bites. The method includes washing each dough bite in a caustic solution with the length of each transverse slot being sufficient for excess caustic solution to drain way from the dough bite. The dough bite is baked into a pretzel bite. Each transverse slot allows a volume of the pretzel bite to increase without being constrained by a pretzel skin formed around each transverse slot to aerate an interior of each pretzel bite.

Described is a unit for forming short pasta comprising at least one pin rotatable in a first direction of rotation about a first axis of rotation and at least one roller rotatable in a second direction of rotation opposite the first direction of rotation about a second axis of rotation parallel to the first axis of rotation; the roller is movable along a first operating direction at right angles to the first and the second axes of rotation between a non-operating position and an operating position alongside the pin; the forming unit comprises a punch movable in another operating direction at right angles to the first operating direction, to the first axis of rotation and to the second axis of rotation between a retracted position and an extracted position for feeding a piece of sheet to the pin and to the roller.

A device for roiling up flat dough around or without a filling to produce a rolled food product is comprised of: a first belt having an end and moving in a first direction toward the end to convey the dough with or without the filling laid on the first belt; a second belt so disposed adjacent to the end as to make the dough conveyed in the first direction be brought into contact with the second belt to curve the dough and movable in a second direction perpendicular to the first direction; and holding members arranged along the first belt to guide the dough curved along the second belt around along the holding members, whereby rolling up the dough.
