A method for producing a roll made of a dough piece and a separator sheet includes feeding the dough piece onto a separator sheet web moved in a conveying direction; cutting-to-length the separator sheet web to form a separator sheet which is assigned to the dough piece and has a front edge in front of the dough piece and a rear edge behind the dough piece, the separator sheet protruding from below the dough piece at the front edge and/or the rear edge with a front protrusion and/or a rear protrusion; rolling up the separator sheet with the dough piece to form the roll; wherein a separator sheet web is used which has a residual-stress state, the residual stress of the separator sheet web causing the cut-to-length separator sheet to roll up automatically at the front edge and/or the rear edge after termination of the cutting-to-length process.

Simultaneously, the conveyor unit advances a bread dough strip on a conveyor belt at a constant linear velocity v, for deposit of the bread dough strip onto the bake form. In order to account for the conical configuration of the bake form, the actions of the forming unit and the conveyor unit are coordinated by the control unit. A method of making a soft pretzel bite includes cutting a series of transverse slots on one lateral side of a dough strip, curling the transverse slotted dough strip into a respective rolled dough strip, exposing each transverse slot, and transversely cutting each rolled dough strip into dough bites. The method includes washing each dough bite in a caustic solution with the length of each transverse slot being sufficient for excess caustic solution to drain way from the dough bite. The dough bite is baked into a pretzel bite. Each transverse slot allows a volume of the pretzel bite to increase without being constrained by a pretzel skin formed around each transverse slot to aerate an interior of each pretzel bite.
