A dough line, comprising at least one conveyor for transporting elongated dough pieces in a direction of conveyance, a first and a second contact surface extending in the direction of conveyance arranged above the conveyor that curls up a dough piece conveyed underneath into a cylindrical shape, and a moulding unit for moulding the curled up dough piece, compressing the dough piece in an axial direction, wherein the first contact surface is configured for exerting a force onto a leading edge of the dough piece with at least a component in a direction opposite to the direction of conveyance and subsequently curling up the dough piece over a part of its length, and the second contact surface is configured for engaging the dough piece at an outer lateral surface of the part already curled up by the first contact surface substantially tangentially with respect to the direction of conveyance.

The invention relates to a device for guiding and supplying dough to a dough processing or transporting means comprising a receiving chamber with at least one belt conveyor comprising a conveyor belt forming at least part of a side wall of the receiving chamber. The receiving chamber is further provided with at least two sealing strips mounted at opposing side ends of the conveyor, wherein the sealing strips create a seal between the conveyor belt and an adjacent stationary wall forming another part of the side wall of the receiving chamber. The invention further relates to a chunker for subdividing dough into smaller parts comprising said device.
DEVICE AND METHOD FOR PORTIONING A DOUGH MASS
The invention relates to a device for portioning a dough mass, comprising a receiving chamber for holding said dough mass comprising a discharge opening, a pair of opposing rotary cutters provided at the discharge opening and arranged for rotation in mutually opposite directions, wherein each cutter comprises at least one blade rotatable around a rotary axis, which blade cooperates with the blade of the other cutter for cutting the dough mass into separate portions, and a release agent delivery system for applying a release agent onto the blades of the rotary cutters, wherein the release agent delivery system is configured for applying the release agent on opposing sides of each of the blades. The invention further relates to a release agent delivery system for use in such a device and a method for portioning a dough mass using such a device.
Hard Taco Shell and Method and Apparatus for Producing the Hard Taco Shell
A taco shell is produced using a rotary cutter including a shaft, an outer blade extending radially outward from the shaft and a first inner blade extending radially outward from the shaft. The outer blade defines an interior area, enclosed by the outer blade, and an exterior area. The first inner blade is located in the interior area and includes a plurality of teeth. A dough piece is cut from a dough sheet with the outer blade, and a first arcuate line of depressions is created in the dough piece with the plurality of teeth. The dough piece is folded to form a shaped dough piece, and the shaped dough piece is baked to produce a hard taco shell.
Wrapping apparatus for making handheld food
An apparatus for making a wrapped food product includes a conveyor under continuous motion. A wrapper is positioned over the moving conveyor. The apparatus includes a filling mechanism that conveys a filling from a hopper to a mold and a piston that pushes the filling from the mold to the wrapper. The apparatus also includes a folding mechanism that folds a side of the wrapper over a portion of the filling, and a second plate that folds the other side of the wrapper over another portion of the filling. A stamper is positioned over the conveyor, pressing the folded wrapper onto the filling. A flipping mechanism of the apparatus includes a set of guide plates and a prong that rotates the filling and a portion of the wrapper around the filling on itself.

Rolled food products are produced by cutting a dough sheet to form a roll sheet having a continuous pattern. The pattern is comprised of an asymmetrical repeat unit. The roll sheet is transported in a first direction with a conveyor system, and the roll sheet is rolled in a second direction to form a continuous roll. The second direction is not parallel to the first direction. The continuous roll is cut to form a plurality of rolls. Each of the plurality of rolls is asymmetrical.

Rolled food products are produced by cutting a dough sheet to form a roll sheet having a continuous pattern. The pattern is comprised of an asymmetrical repeat unit.
