The present invention provides a dumpling automation machine for preparing dumpling-like food product, comprising a pressing and cutting device for dough pad, a filling injection device and a forming assembly, wherein the forming assembly comprises: a mold assembly for supporting a dough pad injected with a filling and maintaining the dough pad in an upright position; a pre-forming assembly for pre-pressing the upright dough pad to form a pre-pressed crest; and a forming assembly for pressing the pre-pressed crest to from a crest; wherein the mold assembly is configured to successively support the dough pad in different positions along a conveyor, and wherein in a pre-forming position, pre-bending portions on the two ends of the crest are formed by the pre-forming assembly, and in a forming position, the pre-bending portions are bent to form bending portion by a bending assembly.

The present invention does not need the participation of people in the forming of the dumpling-like food product, thus it can replace the traditional manufacturing mode of manual dumpling process and thus the productivity effect can be significantly increased. Moreover, the formed dumpling-like food product has a compact crest, a full pocket, a unique shape and is easy to be put into the box.

A machine for making filled pasta includes first and second feeding device for feeding first and second layers of pasta dough, and a shaping device for shaping the filled pasta, located downstream of the feeding devices. The machine controls the advancing of the first and second layers the respective feeding device such that at least along a first stretch of the path of the first layer between the first feeding device and the shaping device, an excess length of the first layer of pasta dough forms by gravity a respective bend along the unrolling direction and at least along a first stretch of the path of the second layer between the second feeding device and the shaping device, an excess length of the second layer of pasta dough forms by gravity a respective bend along the unrolling direction.

A movable forming device (10) to fold a dough piece (P) by moving one end (PS) of the dough piece (P) onto the other end (PT) of the dough piece includes at least one suction tool (23) which holds the one end of the dough piece by suctioning and lifting the one end from its upside, and a supporting tool (33) including a support part (33a) which is movable below the suction tool. The one end of the dough piece is grasped between the suction tool and the supporting part by bringing the suction tool and the supporting part closer to each other.

An apparatus for making a wrapped food product includes a conveyor under continuous motion. A wrapper is positioned over the moving conveyor. The apparatus includes a filling mechanism that conveys a filling from a hopper to a mold and a piston that pushes the filling from the mold to the wrapper. The apparatus also includes a folding mechanism that folds a side of the wrapper over a portion of the filling, and a second plate that folds the other side of the wrapper over another portion of the filling. A stamper is positioned over the conveyor, pressing the folded wrapper onto the filling. A flipping mechanism of the apparatus includes a set of guide plates and a prong that rotates the filling and a portion of the wrapper around the filling on itself.

A machine for making filled pasta, comprising a first modular unit (10), consisting of a kneading machine equipped with a container (11) within which the dough is formed, and a second modular unit (16), constituted by a ravioli machine, which is able to place filling doses inside the dough for continuously producing tortellini, ravioli, etc.; an extruder or die (12) is placed in correspondence of the bottom of said container (11) of the kneading machine, so as to give a desired shape to the dough at the extruder's output. The extruded pasta is thus conveyed downstream the extruder (12) and inside the ravioli machine.

The bulk density of food products with a center fill mat can be reduced by expanding the food strands making up the center fill mat. A method for producing food products with fillings having low bulk density includes preparing the food strands by passing dough through small holes, and enclosing the food strands by a first layer and a second layer.

A machine for making filled pasta includes first and second feeding device for feeding first and second layers of pasta dough, and a shaping device for shaping the filled pasta, located downstream of the feeding devices. The shaping device includes a first and a second advancing and shaping roller for the first and second layers, respectively, disposed to face and be tangent to each other at a coupling station for coupling the first and second layers around a respective filling and a cutting roller acting in conjunction with one of either the first or second rollers, in particular with the second roller. The cutting roller and the roller of the shaping device it acts in conjunction with, in particular the second roller, are tangent to each other at a cutting station where each product is separated from the first and second layers.

A device for forming stuffed pasta products starting from a sheet of dough. The device includes dispensing means for dispensing a stuffing comprising at least one support for the stuffing and a forming station in which means for deforming the sheet of dough is arranged so as to create in the sheet of dough a housing site for housing a dose of stuffing coming from said support. The support may be movable along a predefined direction towards the product forming station.
