A food production system creating folded par-baked units (e.g. mini tacos) for frying, including a sheeter for continuously creating a succession of substantially flat raw dough units and an oven having a plurality of hanging conveyors (e.g. chains). The hanging conveyors are narrow so that the raw dough units raw fold down on either side thereof to form folded dough units. The oven includes a first plurality of cross-burners to pre-heat the hanging conveyor for transferring shape-setting heat directly from the hanging conveyor to the folded dough units. The oven further includes a second plurality of substantially longitudinal shape-setting burners that are substantially in parallel with and adjacent to the top dough carrying side of the hanging conveyor for providing further shape-setting heat to the folded dough units. The oven discharges par-baked units ready for frying.

SYSTEM FOR CONVEYING DOUGH ALONG A CONVEYING SECTION

A system is provided for conveying dough along a conveying section, and the system comprises an elongate dough-conveying element that defines the conveying section. The dough-conveying element comprises a dough-supporting region that forms a supporting surface for dough conveyable or to be conveyed by means of the system, and at least one lateral region extending laterally along the dough-supporting region in the longitudinal direction of the dough-conveying element. The at least one lateral region is movably disposed or formed, in particular pivotally disposed or formed, relative to the dough-supporting region. Furthermore, the dough-conveying element exhibits flexurally-rigid material behavior in the vicinity of the dough-supporting region and resiliently-extensible material behavior in the vicinity of the at least one lateral region.

The present invention relates to a device for cutting a dough piece comprising; a first dough conveyor, for conveying at least one dough sheet in a direction of conveyance that extends in a length direction of the first conveyor; a cutting station, the cutting station comprises at least one module carrier, wherein; said module carrier carrying a cutting module, said module for cutting dough sheets passing underneath the cutting station, and; said module carrier is movable with at least a directional component in a width direction of the first conveyor, and to a method for cutting a piece of dough comprising the steps of: conveying at least one dough sheet on a conveyor; continuously cutting, with at least a directional component in the width direction of the conveyor, the at least one dough sheet comprising; wherein the cutting takes place with a plurality of cutting units, and; the cutting units are independently moved.

Device for aligning dough pieces

The present invention relates to a device for aligning dough pieces, comprising a first conveyor, for conveying dough pieces in a direction of conveyance; a second conveyor, for conveying dough pieces in the same direction of conveyance; wherein the second conveyor is arranged as an extension of the first conveyor, and there is a gap in between the first and the second conveyor; wherein a number of transfer units is arranged in parallel in the gap, each transfer unit for transferring dough pieces from the first conveyor to the second conveyor, wherein the transfer units are adapted for independently moving the dough pieces with a directional component perpendicular to the direction of conveyance during transfer from a front side adjacent to the first conveyor to a back side adjacent to the second conveyor.

Apparatus and Method for Producing Scored Dough Pieces

Frozen un-proofed dough pieces are produced by pinching an upper skin of an un-proofed dough body to a lower skin and producing a score through the upper skin prior to freezing. The un-proofed dough pieces are formed by mass production, with an un-proofed dough sheet being cut to form dough strips which are then cut into the un-proofed dough pieces, with the score for each un-proofed dough piece being formed either before, during or after the individual un-proofed dough pieces are actually created, but before freezing.

SPRING ROLL MAKING APPARATUS

The present invention relates to a spring roll making apparatus comprising: a supply part for supplying rice paper; a moving part for moving the rice paper supplied by means of the supply part; a softening part for inducing softening of the rice paper moving by means of the moving part; a feeding part for feeding a filling onto the rice paper softened by means of the softening part; a folder part for folding the rice paper on which the filling is put; and a rotating part for rolling the rice paper folded by means of the folder part, and thus spring rolls can be mass-produced.
