Machines and methods for making flatbreads
Various examples are related to making flatbreads such as, e.g., a compact machine for making flatbread in a residential kitchen-type environment or other countertop, tabletop, or space limited applications. In one example, a machine includes a hopper including a mixing chamber configured for bulk addition of raw materials for preparation of flatbread pieces; a mixing assembly configured to blend the raw materials into a flatbread dough mixture; a dough piecing assembly configured to generate a dough piece from an extruded portion of the flatbread dough mixture; a lower platen configured to transfer the pressed flatbread dough piece to a cooking zone on the dough contacting surface for cooking; and a flatbread ejection station configured to remove a cooked flatbread piece from the machine. A second cooking zone can be included to further cook the pressed flatbread dough piece prior to ejection from the machine.
DEVICE FOR SPREADING RUNNY BATTER ON A HOTPLATE
A device for spreading a runny batter on a hotplate for manufacturing pancakes or crpes, including a rotary shaft intended to be disposed almost perpendicular with respect to the cooking face of the hotplate, a plate fixed to said rotary shaft, said plate carrying a spreading and raking means, and at least one abutment designed to bear, run or slide on the heating face of the hotplate. The spreading and raking includes at least one rake, the working free edge of which is rectilinear, making it possible to spread a portion of batter previously deposited on the heating face of said hotplate and rake the thickness of batter as long as it remains liquid so as to redeposit a layer of material upstream in order to layer the batter and fill in the holes, reproducing the action of a person skilled in the art of making pancakes or crpes.
METHOD AND APPARATUS FOR SHAPING PIZZA DOUGH
A method and an apparatus of forming food dough to be used for making bases for pizza and the like are described. The method provides for compressing a predefined mass or dose of dough between two surfaces and massaging it by deforming one of said surfaces, consisting of a flexible diaphragm whereon the dough is worked. For this purpose, the forming machine has idle tapered rollers arranged under the diaphragm, which make a motion of revolution about a vertical axis and roll on the extrados of the diaphragm. During the forming process, the dough is squeezed by a movable plate or cover.
Device to prepare turnovers
Device to prepare turnovers which has a base element, a top contact element, and lever for closing. The base element has two parts which are joined by two hinges. One part is fixed and the other one performs a 180 opening and closing movement to form the turnover. This movable part has engravings on its interior surrounding walls which are marked in the dough when the two parts come together to form the pie. The outer edge of the periphery of the base element has a slope that serves to cut the dough excess of the turnovers. When the lever presses the top contact element against the base element a concave tortilla will form. Then, the concave tortilla is stuffed with your choice of filling and the movable part closes to form the turnover. Finally, the movable part opens and the turnover is taken out.
Stamping device for creating one or more rows of endless dough rings
A stamping device serves to create one or more rows of endless dough rings. The stamping device has a stamping head with a stamping punch or a plurality of stamping punches, wherein each stamping punch is associated with a dough ring row. A dough piece support of the stamping device has a dough piece holder or a plurality of dough piece holders. Each dough piece holder of the dough piece support is associated with one of the stamping punches. An opening for the associated stamping punch is configured in a dough piece holder or in each of the dough piece holders as a die. A stamping device results in which the stamping of dough rings in particular to produce doughnuts can also be used, for example, for baking by hand.

A domestic baking device for baking a food product, in particular a flat bread, from a dough portion initially held in a portion capsule (2), the domestic baking device comprising a baking apparatus for baking the dough portion and a capsule-emptying apparatus (7) for removing the dough portion from a portion capsule (2), the capsule-emptying apparatus (7) having at least one force application element, which can be moved along a movement path, for applying force to, in particular deforming and/or moving, the portion capsule (2), which force application element can be driven by means of an electric motor, characterized in that the capsule-emptying apparatus (7) is assigned monitoring means for monitoring the portion capsule emptying operation, the monitoring means comprising comparing means, which are designed to monitor the curve of an electrical motor signal, in particular a current or voltage signal, over the movement path of the force application element for the reaching or exceeding of a reference signal (12), which changes over the movement path of the force application element, and to perform an action if the reference signal (12) is reached or exceeded.
IN-LINE DUMPLING MOLDING SYSTEM
An in-line dumpling molding system is disclosed. The in-line dumpling molding system according to the present invention comprises: a dumpling wrapper cutting device, which cuts a supplied dough sheet to form dumpling wrappers; a dumpling-molding lower folding device, which is disposed below the dumpling wrapper cutting device, on which the cut dumpling wrappers are loaded, and which presses and folds the dumpling wrappers onto which dumpling fillings have been supplied; and a sealing device, which is disposed above the dumpling-molding lower folding device, and presses and seals the folded dumpling wrappers.
Dough Stretcher
A dough stretcher comprising a drive shaft mounted to rotate on a vertical system axis and a mechanism for rotating the drive shaft at a speed in the range of between 40 RPM and 100 RPM. The bottom end of a lower platen shaft is attached to the drive shaft to extend upwardly an angle of from 1 to 4 from the system axis. The lower platen is mounted to the top end of the lower platen shaft so that it rotates perpendicularly about the lower platen shaft. An upper platen is mounted above the lower platen to reciprocate vertically to the lower platen. In operation, as the upper platen is lowered, it touches the dough on the lower platen. As the lower platen gyrates, the upper platen flattens the dough and pushes it outwardly toward the edge.
SYSTEM FOR PRODUCING FLATBREAD, AND METHOD FOR THE PROVISION OF SAME
A system for producing flatbread, comprising a closed portion capsule (1) that has a pre-shaped dough body (7) arranged therein, preferably an individual portion dough body, consisting of a, preferably, yeast-free dough material on the basis of flour and water and preferably on the basis of wheat flour and water, in order to produce flatbread in a domestic flatbread baking device, with the dough body (7) being shaped. According to the invention, the dough body (7) comprises a dough crust all the way around made of the dough material and enclosing a core that consists of a mass of raw dough.
