METHODS AND SYSTEMS FOR MASS PRODUCING BREAD STICKS
An apparatus (e.g., a conveyor system) configured to transport dough through a plurality of substations as described herein. The plurality of substations provides for the handling (e.g., cut, shape, flatten, proof, etc.) of the dough, which has been fermented for eighteen to twenty hours before beginning the baking process, without excess flouring.
Method of forming a food or beverage condiment
A food condiment slice, method of using, composition and method for making, and methods for manufacturing are described. The food condiment slices are used with sandwiches, other food products, and beverages. The food condiment slices may have different structures such as face-fused, side-fused, face-fused-side-fused, woven, and chopped. The food condiment slices are formed from condiments such as catsup, ketchup, mustard, mayonnaise, barbecue sauce, steak sauce, jellies, jam, preserves, butter, margarine, marinades, creamers, and syrups. More than one food condiment can be integrated into a single food condiment slice. The food condiment slices eliminate the need and inconvenience of using and carrying spreadable, squeezable, and pourable food condiments. Also included are beverage condiment slices or discs such as coffee or tea dairy and non-dairy creamers.
Method and apparatus for cutting dough products having holes from a dough sheet
A apparatus may be used to cut a dough product having a hole from a dough sheet. The stamping apparatus may have multiple cutting blades, depending from a platen, that are configured for cutting complementary open shapes, in phases, that together form a closed shape defining the dough product periphery. The stamping apparatus may also have a tubular cutting blade depending from the platen, configured to cut a closed shape defining the dough product hole, that is nested within one of the blades that is configured to cut an open shape. The tubular cutting blade may be retractable about a finger contained therewithin that remains in a fixed position in relation to the tubular cutting blade as the blade retracts. Air trapped within the tubular cutting blade, between the finger and a cutout dough piece that does not form part of the dough product, may become compressed during blade retraction. The compression may facilitate ejection of the cutout dough piece from the tubular cutting blade. The finger may be omitted in some embodiments.

Apparatus system and process for making a bakery product
A system to make a bread loaf includes means for moving continuously pans along a predetermined path, each pan including at least one cavity sized and configured for making a bread loaf. Means conditioning continuously a batch of unconditioned dough reduces the size of air pockets therein to form a conditioned dough. Means continuously extrude the batch of conditioned dough at a controlled volumetric feed rate and at a controlled pressure to provide a constant stream of conditioned dough that is continuously cut into individual packets. The entire batch is converted into individual packets of conditioned dough corresponding to a predetermined number of bread loaves to be produced from the batch, with all the packets deposited individually in cavities of the pans within 10-20 minutes after mixing ingredients that make the batch.

The present teaching relates to a device for shaping multiple dough strip strands including a dough feeding device by means of which dough can be introduced into the device. It has at least two shaping rolls that can be rotated about the axes thereof, at least one discharge roll that can be rotated about the axis thereof, and at least one drive by means of which the shaping rolls and/or the discharge roll can be driven about their axes. The axes of the shaping rolls and of the discharge roll are arranged parallel to and at a distance from each other and a dough chamber is formed between the shaping rolls and the discharge roll. The device has two side covers, which delimit the dough chamber laterally, in particular at the end of the shaping rolls and the discharge roll.
