TRANSSHIPMENT DEVICE FOR DOUGH PIECES
The present invention relates to a transshipment device for dough pieces, comprising at least one carrier picking location, for positioning empty carriers to be picked, at least one carrier loading location, for loading a picked carrier with dough pieces, at least one carrier deposition location, for depositing a carrier loaded with dough pieces, a number of movable grippers for picking, moving and depositing carriers, wherein each gripper is individually movable parallel to a common vertical axis in a vertical direction and each gripper is individually movable in a radial direction from the common vertical axis, multiple grippers project in a different radial direction from the common vertical axis, and all grippers are rotatable together and/or simultaneously about the common vertical axis wherein the at least one carrier picking location, the at least one carrier loading location and the at least one carrier deposition location surround the common vertical axis of rotation, a controller, for controlling movement the grippers, in particular each subsequently along the carrier picking location, the carrier loading location and the carrier deposition location.

Frozen un-proofed dough pieces are produced by pinching an upper skin of an un-proofed dough body to a lower skin and producing a score through the upper skin prior to freezing. The un-proofed dough pieces are formed by mass production, with an un-proofed dough sheet being cut to form dough strips which are then cut into the un-proofed dough pieces, with the score for each un-proofed dough piece being formed either before, during or after the individual un-proofed dough pieces are actually created, but before freezing.

The dough bite is baked into a pretzel bite. Each transverse slot allows a volume of the pretzel bite to increase without being constrained by a pretzel skin formed around each transverse slot to aerate an interior of each pretzel bite.

A dough stamping device for severing dough pieces from a dough sheet comprises a support, on which the dough sheet is depositable, and a blade assembly, which is configured to oscillate and perform indexed lifting actions in a substantially vertical direction. The blade assembly has a first group of blades, which is configured to at least partially generate an outer contour of a dough piece to be severed. In addition, the blade assembly has a second group of blades, which is configured to generate at least one slit inside of the outer contour of the dough piece.

The tool includes at least one stamp adapted to be brought into engagement with a dough piece.
