Dough dividing device and dough processing plant having such a dough dividing device
A dough dividing device has a housing. Arranged therein is a feed chamber, for feeding dough, and a delivery chamber, which is arranged downstream and in delivery communication with the feed chamber. A delivery piston is arranged in a displaceably driven manner inside the delivery chamber for delivering dough. A measuring chamber is arranged downstream of the delivery chamber. In an extended delivery position a face of the delivery piston is arranged in a passage chamber between the delivery chamber and the measuring chamber. The passage chamber is delimited by a wall which extends circumferentially around the piston face. At least one degassing channel serves for degassing the measuring chamber. In the delivery position of the delivery piston the degassing channel is arranged between the piston face and the passage-chamber wall and creates a gas connection between the measuring chamber and a surrounding area.
Transfer Apparatus for Dough Pieces
A transfer apparatus for transferring a dough piece from a first processing station to the next, especially from a dough portioning device to a dough kneading device, includes a rotating dropping roller and a scraper. The rotating dropping roller is configured to release the dough piece from the first processing station. The scraper is associated with the dropping roller and is configured to support the dough piece released from the dropping roller. An oiling device is associated with the dropping roller and is configured to apply oil onto an outside surface of the dropping roller.

The feed pump is configured to pump food mass from the hopper into the cavities. The system has means configured to determine: a position and a motion of the mold drum relative to a frame of the system; a position and a motion of the moving member of the feed pump relative to a housing of the feed pump; and a position and a motion of the rotating feeder relative to the hopper to synchronize the motion of the mold drum and the motion of the moving member of the feed pump and to synchronize the motion of the rotating feeder with the motion of the moving member of the feed pump. The system has at least two pressure sensors.

Described herein is a machine for forming doughs for oven-baked products, of the type including a forming roller provided with mobile pistons for providing first and second forming cavities, a first hopper for feeding a first dough to the forming roller, a second hopper (60) for feeding a second dough to the forming roller, and a conveyor belt for feeding the semi-finished products formed in the forming roller to a subsequent station.
The machine further includes a knife associated to the first hopper and a knife associated to the second hopper.

This invention relates to a precision weighing system for transporting or moving portions of dough with a dividing slider (2) in a device for portioning and processing dough, wherein the system has a rotatably mounted, in particular pivotally mounted, first pivoting lever (11), and a rotatably mounted, in particular pivotally mounted, second pivoting lever (12), wherein the second pivoting lever (12) carries an actuating projection (18) for the reciprocating motion of the dividing slider (2), and the first pivoting lever (11) can be pivoted about the pivot bearing thereof by a drive, wherein an air bellows (4) is disposed between the first pivoting lever (11) and the second pivoting lever (12), the volume and/or shape of said air bellows being variable by compressed air admission, and which specifies the distance between the opposing lever arms of the two pivoting levers (11, 12).

A device for transferring pieces of dough includes a weighing device, in which dough can be weighed into dough portions with a defined weight and/or volume and can be discharged as dough products, and a working device, by which the portioned dough products can be processed, wherein the weighing device is positioned relative to the working device such that a dough product which has been portioned by the weighing device can be transferred to the working device in a transfer region. A release device is arranged in the transfer region between the weighing device and the working device and is designed to be movable in an oscillating manner and such that dough products which are transferred from the weighing device to the working device can be brought into contact with the release device, can be discharged from the weighing device, and can be introduced into the working device.
