The present invention relates to food compositions, in particular food compositions comprising a dispersion of particles in a continuous fat phase, the particles comprising fat droplets dispersed within an amorphous continuous phase. Further aspects of the invention are a process for manufacturing a food composition and the use of particles comprising fat droplets dispersed in an amorphous continuous phase to reduce the sucrose content and/or the saturated fatty acid content of a fat-continuous confectionery product.

COMPOSITION CONTAINING QUERCETAGETIN
A composition contains quercetagetin and 6-hydroxykaempferol, and, optionally further includes patuletin. The composition has an excellent antioxidant effect, and can be used as an active additive in food, drugs, health care products, cosmetics, and feed. In addition, the composition can prompt animal growth, reduce ratio of feed to gain, and improve meat quality in the feed.
STABLE CAROTENOID MICROCAPSULE HAVING HIGH BIOAVAILABILITY AND PREPARATION METHOD THEREFOR
A stable carotenoid microcapsule having high bioavailability and a preparation method therefor. The method includes the following steps: a) mixing carotenoid crystals with an organic solvent, and dissolving the mixture to obtain a carotenoid solution; b) introducing the carotenoid solution and a grease into a dispersion system to fully disperse carotenoid into the grease, and vaporizing the organic solvent to obtain a carotenoid-containing dispersion liquid; c) mixing the carotenoid-containing dispersion liquid and a protective colloid aqueous solution, and emulsifying the mixture to obtain an emulsion; and d) performing spray granulation and drying to obtain a carotenoid microcapsule.

Provided are: a processed edible powder that, when used in a fried-food coating, makes it possible to improve the texture of the coating to a desired texture that undergoes little deterioration over time, makes excellent crispiness and lightness texture; a method for manufacturing said processed edible powder; a fried-food coating in which said processed edible powder is used; a method for manufacturing a fried-food coating; and a method for improving the texture of a fried-food coating.
An oil and fat solidifier is mixed with an edible powder formed from a starchy and/or fibrous raw material to obtain a processed edible powder. Using the processed edible powder as a raw material in a fried-food coating makes it possible to obtain a fried-food having a desired coating texture that undergoes little deterioration over time, makes excellent crispiness and lightness texture.
METHOD FOR EXTRACTING HIGH-QUALITY KRILL OIL FROM KRILL
A method for extracting high-quality krill oil from krill includes the following steps: S1. performing extraction on krill with an organic solvent, and collecting an extracting solution; S2. adding alkaline water to the extracting solution to enable a free fatty acid to form a fatty acid salt to be separated from an oil phase, and performing oil-water phase separation and collecting the oil phase; and S3. purifying the oil phase to obtain the high-quality krill oil. In the present application, the preparation process for krill oil is optimized, organic solvent extraction and alkali refining are ingeniously combined, and process parameters are adjusted and optimized, thereby reducing the acid value of krill oil, and also ensuring the content of active ingredients such as phospholipid and astaxanthin in krill oil to the greatest extent, and improving the quality of krill oil.
POWDERED OIL AND/OR FAT, FOOD AND DRINK CONTAINING POWDERED OIL AND/OR FAT, AND METHOD FOR MANUFACTURING POWDERED OIL AND/OR FAT
A powdered oil and/or fat that includes a high proportion of a medium-chain fatty-acid triglyceride, has excellent solubility and fluidity, and gives rise to little oil flotation during dissolution. The powdered oil and/or fat includes a medium-chain fatty-acid triglyceride, an octenylsuccinic acid-treated starch mixture, and a dextrin, in which the octenylsuccinic acid-treated starch mixture includes a first octenylsuccinic acid-treated starch of which the viscosity of a 10 mass % aqueous solution at 25° C. is less than 30 mPa.Math.S, and a second octenylsuccinic acid-treated starch of which the viscosity of a 10 mass % aqueous solution at 25° C. is 30 mPa.Math.S or more; the content of the second octenylsuccinic acid-treated starch is 12-45 mass %, inclusive, relative to the entire octenylsuccinic acid-treated starch mixture; the dextrose equivalent weight of the dextrin is 10 or more; and the content of the medium-chain fatty-acid triglyceride is 65-85 mass %, inclusive, relative to the entire powdered oil and/or fat.

Provided is means of powderizing a liquid component, wherein the powderizing agent contains an oil and/or fat composition, the oil and/or fat composition contains an oil and/or fat component which contains one or more types of XXX-type triglycerides having fatty acid residues X, each with x carbon atoms, at positions 1 to 3 of glycerin, x, the number of carbon atoms, is an integer selected from 10 to 22, and the XXX-type triglyceride is contained at 50% by mass or more relative to a content of the oil and/or fat component being 100% by mass; or the powderizing agent, wherein the oil and/or fat composition is a powder oil and/or fat composition having a loose bulk density of 0.05 to 0.6 g/cm.sup.3, the oil and/or fat component contains a β-type oil and/or fat, and a particle of the powder oil and/or fat composition has a plate shape.
Shortening particle compositions and dough products made therefrom
The invention relates to shortening particle compositions that are suitable for use in preparing batter or dough products such as biscuits, pizza crusts, pot pie crusts, cinnamon rolls, or dry mixes for same. Typically, the shortening compositions are low in trans fatty acids and in saturated fatty acids. For example, the shortening particle composition may comprise less than about 3% wt. total trans fatty acids and a total of about less than about 61% wt. saturated fatty acids and trans fatty acids.
