The invention relates to a system for producing and/or preparing confectionery compounds from at least one liquid raw material and granular and/or powder raw materials. The system includes at least one first mixing container and at least one other product-processing device. The first mixing container has at least one raw material inlet, a product outlet, and a mixing device for mixing the raw materials in an at least largely homogenous manner. According to the invention, at least the mixing container includes at least one spray device in an upper container region for introducing the at least one liquid raw material, wherein at least one exit cone of the spray device is oriented in the direction of an inner wall surface of the first mixing container at least in some regions. The invention further relates to a method for cleaning a system for producing and/or preparing confectionery compounds.

Proposed is a self-optimizing, adaptive industrial chocolate production system (1), and method thereof. The system comprising a chocolate mass processing line (11) with at least dosing means (2), one or more mixers (3), one or more refiners (4), one or more conches (5), and liquefying and tempering means (6). Appropriate inter-dependent operational parameters of the various devices (2/3/4/5/6) are measured by real-time measuring devices and transmitted to a controller device 12. The measured inter-dependent operational parameters are mutually optimized and dynamically adjusted providing an optimal operation at least in terms of the characteristics of the end chocolate mass 7 and/or throughputs of the chocolate production line 11 and/or other operation conditions as energy consumption.

In one aspect, a method includes heating a quantity of chocolate to a temperature of about 46 degrees Celsius; decreasing the pressure of in a pressure-controllable environment to about 25 Torr; holding the pressure of the pressure-controllable environment at about 25 Torr for a first predetermined period of time; decreasing the pressure of the pressure-controllable environment to about 5 Torr; and holding the pressure of the pressure-controllable environment at about 5 Torr for a second predetermined period of time. Other aspects include ceasing heating the quantity of chocolate; decreasing pressure occurs at an average rate of about 150 Torr per minute; decreasing pressure occurs at an average rate of about 4 Torr per minute; and others.
