ENCAPSULATED SWEETENER GRANULES AND METHODS OF PREPARATION THEREOF
A method for forming encapsulated sweetener granules (ESGs) may include heating a first mixture to form a molten mixture, the first mixture includes one or more polyols and one or more hydrocolloids; cooling the molten mixture to a first temperature to form a cooled molten mixture; adding one or more high-intensity sweeteners to the cooled molten mixture to form a second mixture; cooling the second mixture to a second temperature to form one or more sheets, the second temperature being different from the first temperature; and fragmenting the one or more sheets to form a plurality of encapsulated sweetener granules. The first temperature may be between about 120° C. and about 200° C. The second temperature may be below a glass transition temperature (T.sub.g) of the one or more polyols and the one or more hydrocolloids. For example, the second temperature may be between about 65° C. and about 200° C.
CONTAINERS FOR LIQUID BEVERAGES AND METHODS OF FORMING AND PROCESSING THESE CONTAINERS
In one embodiment, a method of processing and protecting ingredients in a beverage from the effects of photodegradation is provided. The method may include: providing a red coloured container having light transmission properties between about 630 and 700 nm in wavelength; filling the red coloured container with a beverage including water and at least one of the following beverage ingredients to be preserved: High Fructose Corn Syrup (HFCS), Stevia, Aspartame, Sucralose or any other non-nutritive sweetener; capping and/or sealing the red coloured container; wherein the red coloured container is configured to filter an UV/visible light so as to reduce light degradation of the beverage ingredients.
SWEETENING COMPOSITIONS AND USES THEREOF
The present disclosure generally provides low-calorie sweetening compositions that mimic the sensory properties of caloric sweeteners, such as sucrose. In some aspects, the disclosure provides uses of such compositions for sweetening or enhancing the sweetness of a flavored product, such as a food or beverage product. In some aspects, the disclosure provides flavored products, such as food or beverage products, that contain the sweetening compositions, optionally, in combination with one or more other sweeteners.
Glucosyl stevia composition
Glucosyl Stevia compositions are prepared from steviol glycosides of Stevia rebaudiana Bertoni. The glucosylation was performed by cyclodextrin glucanotransferase using the starch as source of glucose residues. The compositions mainly comprise glucosyl derivatives with superior taste characteristics and can be used as sweetness enhancers, flavor enhancers and sweeteners in foods, beverages, cosmetics and pharmaceuticals.

The invention describes products, uses thereof, compositions thereof, and methods to prepare products formed from Maillard reaction products from a sugar donor and/or sweet tea extracts, stevia extracts, swingle (mogroside) extracts, one or more sweet tea extract components, one or more steviol glycosides, one or more mogrosides, one or more glycosylated sweet tea glycosides, one or more glycosylated steviol glycosides or one or more glycosylated mogrosides and an amine donor/reactant.

Encapsulation
An encapsulated flavor, comprising a core material, flavor material and a coating material, the core material comprising a finely-divided native starch, xanthan gum and konjac, the combined weight proportion of the xanthan gum and konjac present in the encapsulated flavour being from about 4% to about 16%, and the relative weight proportions of xanthan gum to konjac being from about 20:80 to about 80:20. The encapsulated flavors may be completely gelatin-free, while retaining the desirable qualities of gelatin.

SWEET PROTEIN FROM TRUFFLE
Newly identified fungal sweet-taste modifying proteins, and the cDNA encoding said proteins are described. Specifically, Myd proteins active in sweet taste activation, and the cDNA encoding the same, are described, along with methods for isolating such cDNA and for isolating and expressing such proteins. Also disclosed is use of a sweetening composition which includes the proteins of the invention, and methods to provide improved flavor to a product for oral administration.
Glucose oxidase compositions
Glucose oxidase and further compositions are described. The glucose oxidase compositions have glucose oxidase and at least one ingredient selected from one or more of carbohydrate (e.g. dietary fibre or saccharide), polyol or sugar alcohol while further compositions are sweeteners, food, compositions for fortification of food, nutraceuticals and pharmaceuticals. The compositions incorporate low glycemic index nutritive compound of glycemic index less than 70, preferably less than 50, and are in the form of powders, granules, crystalline compositions, flours, pills, tablets, capsules, pellets, powder for oral suspensions, gels, liquid solutions and suspensions, and sterile preparations. The compositions regulate one or more diseases/conditions, including but not limited to those associated with blood, kidney, thyroid, nerves, joints, weight, diabetes, oxidative stress, cardiovascular disease, insulin resistance, amyloid foot ulcers, cataract, glaucoma, hypertension, metabolic disorders, digestive disorders, polycystic ovarian syndrome, mastopathy, dupuytren's contracture, gingivitis, periodontitis, dental caries, mouth disorders, cognitive dysfunction, and Parkinson's disease.
