Disclosed is an edible, expandable extrudate having a composition that includes a gel-forming component, a crystalline component having a melting point of up to 150° C., water, and additional components that produce an extrudate composition (dough) having no more than 20 dry wt. % starch and no more than 45 dry wt. % protein and a method for producing an edible expanded extrudate product using water incorporated in the extrudate as the puffing or blowing agent to produce a volumetric expansion of at least 200% as a heated and pressurized extrudate is ejected from an extruder such as a twin-screw extruder.
Methods for Creating of Hemp-Based Extrudates
Provided herein are exemplary methods for creating hemp-based HMEs by adding a hemp-based admixture to an extruder, adding a liquid to the hemp-based admixture in the extruder, heating the hemp-based admixture within the extruder to a predetermined temperature, and extruding the hemp-based admixture through a die of the extruder to create a hemp-based high-moisture extrudate (HME), the hemp-based HME a protein structure that has a liquid retaining ability of approximately 80 percent, by weight.

When the movable block moves to a first position in the housing, the transfer channel communicates to the extrusion cavity with a first channel, and when the movable block moves to a second position in the housing, the transfer channel communicates to the extrusion cavity with a second channel. Therefore, die change and product type change can be achieved without stopping the extruder. If a die is blocked, the extruder does not need to stop for changing a new die.

A crisp proteinaceous food product in which egg white proteins constitute the majority of total proteins present is described. The food product has a bulk density of from 120 to ˜500 g/L and includes water, expanded starch, and denatured proteins. Ovalbumin constitutes at least 33% (w/w) of the proteins. Expanded starch can constitute at least 35% (w/w) of the food product.

Apparatus and methods for producing multiple extruded products having different characteristics from the extruded stream of a single main extruder are provided. A satellite extruder assembly is removably attached to a main extruder allowing for the production of a plurality of different extrusion products from a single stream from one main extruder that is divided into multiple streams channeled to a plurality of satellite extruders. Each of the extruders may be operated at different temperature, pressure, moisture and shear conditions. Additional components may be selectively added to one or more of the material streams.
