Abstract
Plant (1) for producing juice and/or puree from a food product comprising a first extraction section (10) per subject the food product to a first extraction operation in such a way to obtain a first extracted food product comprising puree, or juice, and a first waste product (102). The plant (1), furthermore, provides a second extraction section (20) positioned downstream of the first extraction section (10), and configured to subject an entering product ad a second extraction operation in such a way to obtain a second extracted food product comprising the puree, or juice, and a second waste product (105). between the first and the second extraction section (10,20) a treatment section (30) is provided into which the quantity of extracted food product entering is equal to the quantity of treated product exiting the same. Furthermore, the first extraction section (10), the second extraction section (20) and the treatment section (30) are provided with respective rotors (15,25,35) configured to rotate about a respective axis, respectively at a first, a second and a third angular velocity (ω1,ω2,ω3) wherein the third angular velocity (ω3) is greater than both the first and the second angular velocity (ω1,ω2), but less than 8000 rpm.
Claims
1. A plant (1) for producing juice and/or puree from a food product of vegetable origin, said plant (1) comprising: a first extraction section (10) configured to subject said food product to a first extraction operation and comprising: an inlet (11) for introducing said food product; a first rotor (15) operatively connected to a first driving group (81) arranged to cause said first rotor (15) to rotate about a first rotation axis (115) at a first predetermined angular velocity (ω1); a first sieve (16) provided with a plurality of holes (17) and arranged to be positioned externally to said first rotor (15), said food product being forced by said first rotor (15) against said first sieve (16) in such a way to divide the same into a first extracted food product (101) comprising said puree, or juice, which passes through said first sieve (16) and is discharged through a first outlet (13), and in a first waste product (102) which, instead, does not pass through said sieve (16) and is discharged through a second outlet (14); a second extraction section (20) positioned downstream of said first extraction section (10), said second extraction section (20) being configured to subject an entering product to a second extraction operation and comprising: an inlet (21) for introducing said food product; a second rotor (25) operatively connected to a second driving group (82) arranged to cause said second rotor (25) to rotate about a second rotation axis (125) at a second predetermined angular velocity (ω2); a second sieve (26) provided with a plurality of holes (27) and arranged to be positioned externally to said second rotor (25), said introduced food product being forced by said second rotor (25) against said second sieve (26) in such a way to divide the same into a second extracted food product (104) comprising said puree, or juice, which passes through said second sieve (26) and is discharged through a first outlet (23), and in a second waste product (105) which, instead, does not pass through said second sieve (26) and is discharged through a second outlet (24); said plant (1) being characterized in that between said first and said second extraction section (10,20) a treatment section (30) is provided comprising an inlet (31) for introducing said first extracted food product (101), and an outlet (32) for discharging a treated product arranged to be fed into said second extraction section (20), in that said treatment section (30) is configured in such a way that the quantity of the food product (101) entering the treatment section is equal to the quantity of treated product (103) exiting the same, in that said treatment section (30) comprises a fixed hollow body (33) cylindrical, or conical shaped within which a third rotor (35) is positioned also this cylindrical, or conical shaped in that said third rotor (35) is operatively connected to a third driving group (83) configured to cause said third rotor (35) to rotate about a third rotation axis (135) at a third predetermined angular velocity (ω3) in that said third predetermined angular velocity (ω3) is greater than both the first angular velocity (ω1) and the second angular velocity (ω2), and in that said third predetermined angular velocity (ω3) is less than 8000 rpm, in such a way that said second extracted food product (104) has a high viscosity.
2. Plant (1), according to claim 1, wherein said third predetermined angular velocity (ω3) is less than 5000 rpm.
3. Plant (1), according to claim 1, wherein said third predetermined angular velocity (ω3) is comprised between 1500 and 4500 rpm
4. Plant (1), according to claim 1, wherein said third predetermined angular velocity (ω3) is less than 3500 rpm.
5. Plant (1), according to claim 1, wherein said third predetermined angular velocity (ω3) is comprised between 900 rpm and 3000 rpm.
6. Plant (1), according to any one of the previous claims, wherein said third predetermined angular velocity (ω3) is comprised between 1200 and 2700 rpm.
7. Plant (1), according to any one of the previous claims, wherein said second predetermined angular velocity (ω2) is comprised between 400 and 4000 rpm.
8. Plant (1), according to any one of the previous claims, wherein said third rotor (35) is provided with a plurality of blades (36) at least a part of which provided with an edge (37) facing, in use, towards said fixed hollow body (33) having a plurality of recessed portions (38).
9. Plant (1), according to any one of the previous claims, wherein between said first extraction section (10) and said treatment section (30) a heating section (40) is provided configured to heat said first extracted food product from a first temperature T1 to a second temperature T2 with T2>T1.
10. Plant (1), according to any one of the previous claims, wherein downstream of said first extraction section (10) a pumping device (50) is provided configured to pump said first extracted food product into said treatment section (30).

Plant (1), according to any one of the previous claims, wherein said treatment section (30) is positioned at a first height (h1) and said second extraction section (20) is positioned at a second height (h2) with h1>h2, in such a way that said treated product (103) exiting said treatment section (30) is arranged to be introduced into said second extraction section (20) by gravity.

Plant (1), according to any one of the previous claims, wherein said fixed hollow body (33) has an internal surface (34) facing towards said rotor (35) which is selected from the group comprising of: a smooth surface; a surface provided with a plurality of recessed portions; a surface provided with a plurality of protruding portions; a surface comprising a plurality of recessed portions and a plurality of protruding portions alternating to each other; or a combination thereof.

Plant (1), according to any one of the previous claims, wherein said fixed hollow body (33) has an internal surface (34) facing towards said rotor (35) comprising a plurality of recessed portions (39a) and a plurality of protruding portions (39b) alternating to each other, wherein said recessed portions (39a) are positioned at a maximum distance (dmax) from said rotor (35), and wherein said protruding portions (39b) are positioned at a minimum distance (dmin) from said rotor (35), and wherein the ratio between said maximum distance (dmax) and said minimum distance (dmin) is comprised between 1 and 20, i.e. 1≤dmax/dmin≤20.

Plant (1), according to any one of the previous claims, wherein is a control unit (300) is provided configured to detect the second angular velocity (ω2) and to actuate said third driving group (83) to cause said third rotor (35) to rotate at a corresponding third angular velocity (ω3), once that for said second extraction section (20) a yield greater than a determined threshold value has been reached.

Plant (1), according to any one of the previous claims, wherein between said first extraction section (10) and said treatment section (30) a diverter device (70) is provided configured to divert said first extracted product (101) and divide the same into a first flow (101a) which is fed into said treatment section (30), and a second flow (101b) which is fed downstream of said treatment section (30) bypassing said treatment section (30).

Plant (1), according to claim 15, wherein a device for measuring the viscosity (75) is, furthermore, provided configured to measure the viscosity of said product fed into said second extraction section (20) and/or said second extracted product (104) and to send a corresponding signal to a control unit (300), said control unit (300) being configured to operate said diverter device (70) in order to increase, or decrease, said first flow (101a) of said first extracted product (101) fed into said treatment section (30) and, therefore, to increase, or decrease, respectively, the viscosity of said product fed into said second extraction section (20).
17. Plant (1), according to any one of the previous claims, wherein said surface of said fixed hollow body (33) is at least equal to 50% of the surface of said second sieve (26) of said second extraction section (20).
18. Plant (1), according to any one of the previous claims, wherein said third rotation axis (135) of said third rotor (35) is a substantially horizontal rotation axis.
19. Plant (1), according to claim 8, wherein at least a part of said blades (36) of said third rotor (35), at an edge (37) arranged to face, in use, towards said internal wall (34) of said fixed hollow body (33) is provided with a plurality of recessed portions, or depressions (38).
20. Plant (1), according to claim 19, wherein said recessed portions (38) have all a same width and depth.
21. Plant (1), according to claim 19, wherein said recessed portions (38) have a width and/or a depth which decreases going from said inlet (31) to said outlet (32) of said treatment section (30).
22. Plant (1), according to any one of the previous claims, wherein said third rotor (35) has a diameter φ3 comprised between 200 and 1000 mm.
23. Plant (1), according to any one of the previous claims, wherein said third rotor (35) has a diameter φ3 comprised between 400 and 500 mm.
24. Plant (1), according to any one of the previous claims, wherein said holes (17) of said first sieve (16) have a size (d1) greater than, or equal to two times the size (d2) of said holes (27) of said second sieve (26).
25. Plant (1), according to any one of the previous claims, wherein said holes (17) of said first sieve (16) have a size (d1) greater than 5 mm.
26. Plant (1), according to any one of the previous claims, wherein said holes (17) of said first sieve (16) have a size greater than 10 mm.
27. Plant (1), according to any one of the previous claims, wherein said holes (17) of said first sieve (16) have a size greater than 20 mm.
28. Plant (1) according to any claim from 1 to 24, wherein said holes (17) of said first sieve (16) have a size comprised between 5 mm and 30 mm.
29. Plant (1), according to any claim from 1 to 24, wherein said holes (17) of said first sieve (16) have a size comprised between 10 mm and 30 mm.
30. Plant (1), according to any one of the previous claims, wherein upstream of said first extraction section (10) a preliminary treatment section (60) is provided selected from the group comprising: a softening section configured to apply a series of compression stresses in rapid succession; a division section configured to divide a starting food product of vegetable origin into pieces of predetermined size; or a combination thereof.
31. Plant (1), according to claim 30, wherein said division section (60) is configured to divide said starting food product of vegetable origin into pieces of size comprised between 5 mm and 50 mm.
32. Method for producing juice and/or puree da a food product, comprising the steps of: extracting in a first extraction section (10) a starting food product, said extraction section (10) being equipped with a first sieve provided with a plurality of holes and with a first rotor (15) mounted within said first sieve and operatively connected to a first driving group (81), said first driving group (81) being arranged to cause said first rotor (15) to rotate about a first rotation axis (115) to generate a centrifugal force which pushes said starting food product against said sieve causing the same to be divided into a first extracted food product which passes through the holes of said first sieve and is discharged through a first outlet, and a first waste product (102) which does not pass through said holes of said sieve and is discharged through a second outlet; feeding a predetermined quantity of said first extracted food product in a treatment section (30) positioned downstream of said first extraction section (10); treating said first extracted food product within said treatment section (30) obtaining a treated product (103); discharging of a predetermined quantity of said treated product (103) from said treatment section (30), said predetermined quantity of said treated product (103) discharged being equal to said predetermined quantity of said first extracted food product that is fed into said treatment section (30); feeding said treated product (103) into a second extraction section (20), said second extraction section (20) being equipped with a second sieve provided with a plurality of holes and with a second rotor (25) mounted within said second sieve and operatively connected to a second driving group (82), said second driving group (82) being arranged to cause said second rotor (25) to rotate about a second rotation axis (125) in order to generate a centrifugal force which pushes said treated food product (103) against said second sieve (26) thus causing the same to be divided into a second extracted food product (104) which passes through the holes of said second sieve (26) and is discharged through a first outlet (22) and a second waste product (105) which does not pass through said holes of said second sieve (26) and is discharged through a second outlet (23); said method being characterized in that the quantity of said first extracted product (101) fed into said treatment section (30) is equal to the quantity of said treated product (103) discharged from said treatment section (30) and fed into said second extraction section (20) in that said treatment is carried out by a third rotor (35) having a cylindrical, or conical, shape arranged within a fixed hollow body (33) also this cylindrical, or conical shaped and in that said third rotor (35) is operatively connected to a third driving group (83) configured to cause said third rotor (35) to rotate about a third rotation axis (135) at a third predetermined angular velocity (ω3), in that said third predetermined angular velocity (ω3) is greater both than said first angular velocity (ω1) and said second angular velocity (ω2), and in that said third predetermined angular velocity (ω3) is less than 8000 rpm, in such a way that said second extracted food product has a high viscosity.
