Abstract
The present invention discloses an edible coating (1) adapted for providing at least one of a passive and active function, as well as edible products (2) presenting a portion of edible substance (3) and said edible coating (1) adapted for providing at least one of a passive and active function to said portion of edible substance (2).
The present invention further discloses a system of edible products (2) presenting said edible coating (1), as well as use of said system of edible products (2).
Claims
1. An edible coating (1), characterized in that includes at least one substance, preferentially at least one polysaccharide, extractable from at least one of coffee and coffee derivate.
2. The edible coating (1) according to claim 1, characterized in that includes at least one polysaccharide extractable from coffee, including from green coffee beans, from a given blend of roasted ground coffee beans, from a derivate substance thereof, including a beverage, such as for example espresso type coffee, a coffee based concentrate, from residues resulting from processing coffee, such as for example coffee grounds resulting from the extraction of espresso type coffee.

The edible coating (1) according to claim 1, characterized in that is adapted so that provides at least one of: a passive function, including at least a passive function from the group including structural stability and fluid barrier to at least one of volatile organic compounds, oxygen, water vapour, and an active function, including at least one active function from the group including additive substances, colouring substances, effervescent substances, and taste substances, to be added to an edible product.

The edible coating (1) according to claim 1, characterized in that includes at least one polysaccharide selected from the group of polysaccharides extractable from coffee or from a coffee derivate, preferentially extractable from an espresso type coffee beverage, that includes galactomannans, arabinogalactans, from the group of sugars extractable from coffee or from a coffee derivate, preferentially from roasted ground coffee beans and respective espresso type coffee beverage, including galactose, mannose, arabinose, rhamnose and glucose, and also from the group of the pectins.

The edible coating (1) according to claim 1, characterized in that includes at least one polysaccharide extractable from coffee in a proportion of up to 15% of total content of solids in the espresso type coffee beverage that consists of 2 g per 40 ml of espresso type coffee beverage, whereby said polysaccharides present a content of polysaccharide material of low molecular weight of up to 600 mg per 40 ml of espresso type coffee beverage.
6. The edible coating (1) according to claim 1, characterized in that includes chlorogenic acids extractable from coffee or from a coffee derivate.
7. The edible coating (1) according to claim 1, characterized in that includes at least one from the group that includes lipids and waxes, including bee wax, and plasticizing agents, including glycerol, and surfactant agents, including Tween 80 and lecithin.

The edible coating (1) according to claim 1, characterized in that it is provided so that dissolves when impinged by a fluid flow presenting at least one of: a flow pressure of at least 2 bar, preferentially of at least 5 bar and smaller than 16 bar, and a flow temperature bigger than 40 C., preferentially bigger than 60 C., particularly preferentially between 80 and 92 C.

The edible coating (1) according to claim 1, characterized in that it is provided as a continuous element developing over at least part of the exterior surface of an edible portion (3) of an edible substance, in particular of an edible substance that is precursor of a beverage, such as for example roasted ground coffee beans.

A system for the distribution of edible products (2) that comprises: at least one edible portion (3) from an edible substance, at least one edible coating (1) provided adjacent to at least part of the exterior surface of said edible portion (3), characterized in that said edible coating (1) includes at least one of: polysaccharides and chlorogenic acids, extractable from coffee, including from green coffee beans, from a given blend of roasted ground coffee beans, from a derivate substance thereof, including a beverage, such as for example espresso type coffee, a coffee based concentrate, residues from processing coffee, such as for example coffee grounds resulting from the extraction of espresso type coffee.

The system according to claim 10, characterized in that said edible coating (1) is adapted as an envelope-like disposition upon at least part of the exterior surface of said edible portion (2), preferentially provided as at least part of a nucleus, so that provides a fluid barrier on said portion of exterior surface.
12. The system according to claim 10, characterized in that said edible coating (1) is provided as a wall-like disposition presenting a thickness smaller than 8 mm, preferentially smaller than 5 mm, particularly preferentially smaller than 2 mm.
13. The system according to claim 10, characterized in that said edible coating (1) is provided upon at least part, preferentially upon the entire exterior surface of a respective edible portion (3).

The system according to claim 10, characterized in that said edible coating (1) is provided as a mesh-like disposition, filter-like or similar upon at least part of the exterior surface of a respective edible portion (2), so that provides flow passages and/or restrictions to flow passage when impinged by a pressurized flow.
15. The system according to claim 10, characterized in that said edible portion (3) is provided in a substantially loose powder, or compacted powder disposition, such as for example a compacted tablet or similar.
16. The system according to claim 10, characterized in that includes two edible portions (3, 3), optionally different, whereby said proportions (3, 3) are provided being at least partially separated by an edible coating (1).
17. The system according to claim 10, characterized in that includes at least two types of edible products (2, 2) presenting at least one of different edible coating (1) and different edible portion (3).
18. The system according to claim 10, characterized in that said types of edible products (2, 2) present edible coatings (1, 1) with at least one of different compositions and different quantities, so that provide different active and/or passive properties.
19. The system according to claim 10, characterized in that said types of edible products (2, 2) further present at least one non-edible structural disposition (4), preferentially provided in a biodegradable substance.
