A rocker-type poultry chiller, including a tank for receiving poultry carcasses and holding chilled water, an axle mounted in the tank, a main paddle connected to the axle, and a side paddle connected to the axle. The oscillation of the main paddle and the side paddle urges the carcasses upwardly and laterally, which contributes to the cooling of the carcasses as a result of their thorough contact in the chilled water. The movement of the paddles also gently massages the carcasses by gently bumping them against the paddle blades and the wall of the tank. The repeated compression of the carcasses tends to tenderize the meat. The side paddles ensure more predictable and consistent contact between the paddles and all of the carcasses, which causes more agitation of the carcasses and more effective washing of the carcasses.

Compositions and methods for cleaning and decontaminating animal carcasses are disclosed. The compositions comprise a mud ball remover having a thioglycolate salt and a base and an antimicrobial agent effective to remove mud balls and reduce microbial contamination of a hide surface at ambient temperatures. The methods comprise cleaning and decontaminating an animal carcass by applying the disclosed compositions onto the surface of the animal carcass to soften and loosen foreign debris attached to the carcass followed by mechanically removing the foreign debris while preserving the integrity and quality of the hide byproduct and resulting leather articles.

The present invention is an improved system and method of automatic extraction. The system of automatic extraction includes a processing line, a pan, a bile source, an imaging system, a targeting system, and an extraction tool. The processing line moves one or more pans with one or more bile sources on each pan. An imaging system and targeting system coordinate to target bile sources with an extraction tool using a coordinate system. A method of automatic extraction includes locating a bile source on a coordinate system, targeting the bile source, puncturing the bile source with an extraction tool, extracting bile from a source, and storing the extracted bile.

Embodiments of the present invention may provide a sealable animal carcass enclosement system perhaps including a substantially planar foldable envelope perhaps made of a vinyl coated mesh material, sealing securements along an edge of some of the sides of the substantially planar foldable envelope when in said open state; and perhaps even a plication component configured to guide overlapping closure of said substantially planar foldable envelope and matching of counterparts of said sealing securements so as to provide an enclosed packet for animal carcasses.

A method and system of imaging carcasses involves acquiring a first set of multi-view images from respective multiple positions at a first side of a passageway, and a second set of multi-view images from respective multiple positions at a second side of the passageway. The multi-view images are acquired at a first time point upon detection of a carcass at a predetermined position at the passageway. A 3D carcass model is computed from the first and the second set of multi-view images, and is based on a 3D point cloud and/or a polygon surface. An occluded or spatially sparsely represented region locates a first region of the 3D model. The 3D model is manipulated at least at the first region to change the volume or distribution of volume of the 3D model in accordance with a weight registered by a load cell and/or a representation of a carcass suspension position.

A chicken skinning handheld kitchen tool of a unitary structure is provided. In some embodiments, the present invention may provide for conically shaped kitchen tool with a ridged base member and a top member having teeth or tine extending therefrom and curving downward at a variable angle of 45 to 90 degrees. The present invention may be made from a thermoplastic polymer that is sufficiently rigid to withstand forces that would normally be applied without breaking and sufficiently flexible so that it will flex during operation.

A method of processing a food object while the food object is being conveyed, comprises acquiring image data of the food object, cutting the food object into smaller food pieces, determining, based on the acquired image data, whether the food object contains undesired objects, and in case such undesired objects are detected, identifying which of the smaller food pieces contain the undesired objects.

An offset weighing apparatus and method for use with poultry processing equipment includes a weigh assembly to weigh an animal connected to a shackle assembly as the shackle moves in contact with a force sensor along a conveyor line. A diverter assembly laterally displaces a shackle retaining the animal from below the conveyor line into engagement with the force sensor. The bending axis of the force sensor is approximately parallel to the displaced shackle. The angular position of the bending axis and shackle, and relative positions, friction, and forces of the components of the shackle assembly and weigh assembly are analyzed to calculate the weight of the animal connected to the shackle without removing the animal from the shackle or ceasing movement of the conveyor line.

A scribe saw assembly is provided for a loin puller and has substantially reduced wear and increased life of the assembly components. A pinion assembly includes a double keyway and opposing cutouts on the pinion shaft, with dual needle bearings. A bevel gear assembly includes pins for holding the scribe saw blade and dual bearings on the bevel gear shaft to eliminate shaft flex and blade wear. The standard is mounted to the motor housing with load bearing pins to prevent loosening of the mounting bolts. An adjustable ski is provided on the standard to control the cutting depth of the scribe saw blade.
