Revolutionized tuna process
A revolutionized tuna process according to this invention generally comprising the steps of thawing of frozen tuna, de-heading and degutting, fileting, de-skinning, cleaning of the de-skinned tuna filet, pre-cooking, cooling, packing of the cleaned and pre-cooked tuna loin, and sterilizing the packed tuna loin or freezing the tuna loin. Not only does the process according to this invention reduces the energy utilization by half, it also significantly reduces the time required for cooking and cooling. Therefore, the whole processing time is significantly reduced from at least 8.0 hours in the conventional process to less than 30 minutes.

An apparatus is provided for curing and more specifically for cold smoking meat or seafood with a blend of filtered smoke from an organic smoking material such as softwoods such as pine or tropical palms such as coconut wood or such as mixed wood sawdust from a sawmill, that are not traditionally used for smoking seafood or meat due to the harsh flavor imparted by their smoke, and unfiltered smoke from a second organic smoking material such as hardwood smoke, or other pleasant flavor-imparting smoke. The blending of filtered smoke from a first organic smoking material such as coniferous softwood, tropical palm wood or mixed sawdust from a sawmill with unfiltered pleasant flavor-imparting smoke from the second organic smoking material reduces the cost of the smoking and curing process and allows versatility in application in terms of preservative properties and flavor imparted to the cured meat or seafood.

Method for preparation of a protein supplement for animal feed
Method for improving drying of a concentrated acid salmon silage, during preparation of a protein supplement for animal feed, from salmon silage, wherein in a continuous and sequential form includes treating the stored salmon silage through steps of cooking, separation, concentration, drying, grinding, addition of antioxidant, and packing, wherein after the concentration step, the following steps proceed: a) incorporating in a first mixer an amount of concentrated acid salmon silage, and an amount of flour-type carrier, obtaining an homogeneous mixture; b) incorporating in a second mixer an additional amount of concentrated acid salmon silage, an amount from the first mixer, and a fraction of the load coming out of the dryer, the latter as a recycle; c) transferring the mixture formed in the second mixer to a dryer; d) recycling a fraction of the load, equivalent to the amount that can be from 30% to 60% of the output of the second mixer, fraction defined in function of the humidity at the exit of the dryer; e) passing the mixture of the dry product at the exit of the dryer to a cooler, wherein the cooling is performed from 80° C. to 25° C. for 10 to 30 minutes; f) feeding the dry and cooled down product to the steps of grinding, adding an antioxidant, and packing of the protein supplement for animal feed. Also disclosed are the protein supplement and system to improve drying said protein feed.

Disclosed herein is a composition for forming an aerated ready-to-eat food product quiescently and in ambient environmental conditions. The composition comprises a matrix forming system which is capable of forming a matrix defining a structure of the food product at ambient environmental conditions upon exposure to a liquid. The composition also comprises an aerating system comprising an acidulant which is capable of acidulating at ambient environmental conditions at a rate that is similar to a rate at which the matrix is formed upon exposure to a liquid, and an alkali which is capable of reacting with the acidulant to form an aerating gas.
