The present invention relates to a shelf-stable cooking-aid for coating and flying a food product in one step for example in a heating pan, the cooking aid comprising 3-28 wt % oil, 20-60 wt % water, 2.3-5.5 wt % modified starch, 3-15 wt % salt, 0.5-30 wt % sugar and 0.5-30 wt % flavorings and wherein the cooking aid has a viscosity in the range of 8 to 60 Pa.Math.s at a shear rate of 1s.sup.−1 at 25° C., and the oil and water are in form of an emulsion. Further aspects of the invention are the method for making said cooking-aid as well as a method for coating and flying a food product in a heated pan or heated surface.

A process for processing mandarin segments with both acidic and alkaline process water being directly utilized uses an organic acid or an inorganic polyacid instead of a monobasic inorganic acid. Mandarin segments, obtained by separating peeled mandarin into the segments, are treated by the organic acid or inorganic polyacid solution, and then subjected to removal of segment membranes in an alkali solution. The acidic and alkaline water after treatment is collected directly. The collected water can then be filtered and mixed for making an electrolyte beverage or a beverage base, containing multiple functional ingredients such as pectin, flavonoid, pigment, and limonin. Also, the collected water can be used to make dietary fiber having an activity of improving intestinal function.

The strain CCFM8631 of Lactobacillus reuteri can be used for preventing, relieving or treating metabolic disorder, such as metabolic syndrome, irritable bowel syndrome and mental diseases related to metabolic syndrome such as anxiety, depression and so on.

SOLID FOOD COMPOSITION CONTAINING INSOLUBLE FOOD FIBER AND METHOD FOR MANUFACTURING THE SAME
A solid food product composition containing insoluble dietary fibers, which prevents powders and/or ingredients from scattering when folded into bite-size pieces or chewed at eating is provided. The solid food product composition containing insoluble dietary fibers includes an edible part and/or a non-edible part of one or more foodstuffs containing the insoluble dietary fibers. A content of the foodstuff is 5% or more and 95% or less in terms of total dry mass, a content of insoluble dietary fibers is 1% or more, a sugar content is 10% or more and 75% or less, a moisture content is 20% or less, a 50% cumulative particle diameter after ultrasonication is more than 15 μm and 500 μm or less, a 90% cumulative particle diameter after ultrasonication is 50 μm or more and 1,000 μm or less and a minimum particle diameter after ultrasonication is 4 μm or less.
Activated pectin-containing biomass compositions and products
Methods for producing an activated pectin-containing biomass composition are provided. The method includes (A) mixing a starting pectin-containing biomass material having an insoluble fiber component and an insoluble protopectin component with an aqueous solution of an alcohol to form a mixture; (B) activating the starting pectin-containing biomass material to form an activated pectin-containing biomass material having the insoluble fiber component and a soluble pectin component by subjecting the starting pectin-containing biomass material to (i) an activating solution formed by adding acid to the mixture to adjust the pH of the mixture within the range from at or about 0.5 to at or about 2.5 and (ii) heat to a temperature greater than at or about 40 degrees Celsius; and (C) applying mechanical energy either (i) to the mixture of step A), (ii) during the activating of step B), or (iii) to the mixture of step A) and during the activating of step B); and (D) separating the activated pectin-containing biomass material from the mixture; wherein during the method the alcohol present in the mixture is at or greater than about 40 weight percent based on the total weight of the mixture. Activated pectin-containing biomass compositions are also provided.
