METHODS OF MAKING COFFEE WITH HIGH AMOUNTS OF PHENOLS AND CHLOROGENIC ACIDS
A method of making coffee with high amounts of phenols and chlorogenic acids is provided. Coffee beans are tested for phenols and chlorogenic acids and selected if they are found to have predetermined levels of phenols and chlorogenic acids. The selected coffee beans may be treated and then shipped where they are roasted at a temperature and for a time period that preserves the phenols and chlorogenic acids therein without adversely affecting the taste and aroma thereof. The roasted coffee beans are then ground to a selected particle size and are brewed with water at a temperature and for a time period to produce liquid coffee having high amounts of phenols and chlorogenic acids that also has favorable flavor.

In the penetration step, a carbon dioxide fluid is contacted to a sample of coffee green bean inside a chamber at a temperature of 28-50 C. and a pressure of 950-3,500 psi for 3-30 minutes to allow the carbon dioxide fluid to penetrate into the sample of coffee green bean. In a pressure relief step, the pressure in the chamber is reduced to normal pressure in a time period of 2-15 minutes, allowing the carbon dioxide fluid penetrated into the sample of coffee green bean to break down cell wall of the sample of coffee green bean to obtain a sample of coffee green bean with broken cell wall.

A system and a method of making a soluble coffee product is used to make a serving of fresh coffee on the go that is healthy and matches the user's taste. The overall process starts by mixing the amount of soluble coffee, the first amount of liquid sweetener, and the amount of bee pollen into a quantity of liquid mixture. The quantity of liquid mixture is partitioned into liquid-mixture portions by filling each molding receptacle with a corresponding liquid-mixture portion from the liquid-mixture portions. Each liquid-mixture portion is inserted with a corresponding stick from the lollipop sticks. The liquid-mixture portions are frozen into solid-mixture portions.
