MALTODEXTRIN SYRUP HAVING A DE LESS THAN 20 WHILE HAVING PROPERTIES LIKE A CORN SYRUP OF DE 30-45
A new type of maltodextrin syrup is described having functional properties of a corn syrup having a DE of between 35-45 while having a DE value less than 20. In the most general embodiment, the syrup contains no more than 70% of total saccharides with a DP of less than 10 while at the same time having least 50% of the saccharides do have a DP of less than 10. The remainder of the saccharides have a DP of 10 or more. For those saccharides having a DP of less than 10 the distribution is weighted toward the higher end with saccharides having a DP of 5 to 9 being more than the saccharides having a DP of 1 to 4.

The sugar drawing apparatus comprises: a sugar storage container, a feed port being provided on the upper end of the sugar storage container and a sugar storage cavity being provided within the sugar storage container: a drawing pipeline having one end extending into the sugar storage cavity and the other end thereof extending out of the sugar storage container and communicated with a reaction container, and used for transferring sugar in the sugar storage cavity into the reaction container, and a sleeve sleeved on the outside of the drawing pipeline, one end of the sleeve extending into the sugar storage cavity and the other end thereof extending out of the sugar storage container and communicated with ambient air, and a flow channel for air to flow through being reserved between the sleeve and the drawing pipeline.

Sweetener with imbedded high potency ingredients and process and apparatus for making the sweetener
An enhanced sweetener made from granules of a carrier, such as sucrose, embedded with molecules of a high potency sweetener, such as stevia extract. The process for making the enhanced sweetener involves dissolving the high potency sweetener in warmed water and mixing the resulting solution with the heated carrier. The resulting slurry is then dried, optionally under reduced pressure. The apparatus for producing the enhanced sweetener includes one or more heated agitators connected to a heated, airtight blender, which can be evacuated with a vacuum pump. The result is an enhanced sweetener with a homogenous distribution of high potency ingredients that retains the functionalities of sugar necessary for food preparation, improves the spreading of the sweetness throughout the food, and reduces aftertastes. Other high potency ingredients and carriers may also be used in the process.

The present invention relates to amorphous porous particles comprising sugar, a bulking agent and surfactant, having a closed porosity of between 20 to 60% a sphericity of at least between 0.8 and 1. In a further aspect the present invention relates to a process of making said amorphous porous particles and their use as bulk sugar replacers in food products such as fat based confectionery products for example, chocolate.
