The present invention falls within the fields of nutrition and pharmacy, being related to an orally disintegrating tablet comprising the lactase enzyme in combination with pharmaceutically acceptable excipients, and to a process for preparing same. The tablet of the present invention, as a result of disintegrating in a reduced amount of time, can be orally administered, making it easier to swallow and dispensing with the simultaneous consumption of liquid, and can also be mixed with lactose-rich foods, inducing enzyme activity outside of the organism.
<i>Paenibacillus pabuli</i>-derived enzyme capable of producing galacto-oligosaccharide, and method for producing galacto-oligosaccharide
[Problem] To provide: a novel enzyme which is derived from a microorganism other than Bacillus circulans and is highly selective for galactotrisaccharide production and with which the galactooligosaccharide can be highly efficiently produced; and a novel method capable of producing the galactooligosaccharide. [Solution] A method for producing a galatooligosaccharide, the method including bringing an enzyme having an amino acid sequence selected from the group consisting of (a) to (f) and cells of a bacterium belonging to the genus Paenibacillus and/or a galactooligosaccharide-producing enzyme for the bacterium, into contact with lactose. (a) An amino acid sequence of sequence number 1. (b) An amino acid sequence of sequence number 2. (c) An amino acid sequence of an enzyme having galactooligosaccharide-producing activity, the amino acid sequence being the amino acid sequence of sequence number 1 in which one to ten amino acids have been replaced, removed, or inserted. (d) An amino acid sequence of an enzyme having galactooligosaccharide-producing activity, the amino acid sequence being the amino acid sequence of sequence number 2 in which one to ten amino acids have been replaced, removed, or inserted. (e) An amino acid sequence of an enzyme having galactooligosaccharide-producing activity, the amino acid sequence having a homology of 80% or higher but less than 100% to the amino acid sequence of sequence number 1. (f) An amino acid sequence of an enzyme having galactooligosaccharide-producing activity, the amino acid sequence having a homology of 80% or higher but less than 100% to the amino acid sequence of sequence number 2.

The subject invention aims to solve the problem of production of glucose accompanying the production of galactooligosaccharides after milk raw material is treated with lactase, by additionally adding transglucosidase to convert glucose to functional isomalto-oligosaccharide. The subject invention relates to a process for the production of a milk product enhanced with oligo-saccharides, characterized in that lactase and transglucosidase are used to treat milk raw materials. The subject invention further relates to the milk product of the process of the invention, whose oligo-saccharide content reaches a functional level. Human physiological effect assays confirm that the milk product increases intestinal probiotics, reduces harmful intestinal bacteria, improves the intestinal bacterial flora, reduces blood total cholesterol, reduces blood LDL cholesterol, increases blood HDL cholesterol, and improves the immunity, and may be used as low glycemic index (GI) dietary supplements.

It relates to a method for producing a fermented milk product comprising the steps: (a) Providing a starter culture comprising one or more lactic acid bacteria strains selected from a group consisting of: DSM 22935, DSM 22585, DSM 22586, DSM28910 and DSM33677; (b) Adding the starter culture to a milk base to ferment said milk base until a target pH is reached; and (c) Adding a lactase to the milk base; wherein the fermented milk product has improved texture and/or reduced post-acidification as compared to a fermented milk product produced without addition of the lactase of step c) or the starter culture of step a).
