A brewing device may have several different configurations to make various beverages. Under computer control, the device may be able to sequence various ingredients using direct or recirculating percolation for immediate consumption, such as coffee and tea, or for fermenting for later consumption, such as beer, kombutcha, or other consumable products. The device may be capable of a sequenced percolation, such as coffee infusion of a first type of coffee, then a second type of coffee, followed by vanilla, and followed by spices. The device may be capable of sequential, cascading, or parallel percolation directly or using recirculating paths. Ingredients may be pre-packaged or may be placed into various removable and cleanable containers. The device may further be capable of infusion by steeping ingredients in a dispensing device.

A device for preparing coffee by manual brewing includes: a filter holder for receiving a filter insert with ground coffee; a holder in which the filter holder is inserted; a vessel arranged under the filter holder into which the brewed coffee can be filled; a drain arranged on the filter holder; and a closure element arranged on the drain for opening and closing the drain. An actuating element for the closure element is provided on the filter holder by which the closure element can be moved between an open position and a closed position independently of the vessel.

Apparatus and methods are provided for brewing a beverage from precursor particulates. The apparatus comprises a liquid delivery system for delivering liquid into a brewing basket. The liquid delivery system comprises a showerhead disposed above at least a portion of the brewing basket. A brewing unit for preparing beverages from a powdered product containing at least one ingredient is provided. The brewing unit has a support structure having an inner cavity, and a dispensing assembly having a first assembly part configured as a drawer and having a receptacle adapted to receive the powdered product, and a second assembly part mounted to slide vertically within an upper part of the inner cavity, between a raised position and a lowered position. A filtering element defining a bottom surface of the receptacle and of the brewing chamber is mounted within the first assembly part. A dispensing duct is formed through the filtering element. A brewing head defining a top surface of the brewing chamber is carried by a lower end of the second assembly part.
