A system for measuring the state of degradation of cooking oil or fat includes at least one fryer pot. A conduit is fluidly connected to the fryer pot for transporting cooking oil from the fryer pot and returning the cooking oil back to the fryer pot. A pump is provided for re-circulating cooking oil to and from the fryer pot. A sensor is disposed in fluid communication with the conduit and measures an electrical property of the cooking oil as the cooking oil flows past the sensor and is returned to the at least one fryer pot.

Continuously operating filtering apparatus

A deep fat fryer with continuous oil filtering and purging of sediments therefrom during uninterrupted fryer operation is provided. The filter includes a cylindrical hollow housing with a first end and a second end and a hollow cylindrical screen with a longitudinal axis and first and second ends. The screen is disposed coaxially within the hollow housing to define an annulus therebetween. A piston mounted within the screen and reciprocatingly movable along the longitudinal axis between the first and second ends of the screen. A pump, seal, and associate motor are provided to provide continuous oil flow through the filter and the remainder of the fryer. A heat exchanger is provided downstream of the pump to transfer heat from the fryer to the oil flowing through the heat exchanger.

A used cooking oil filtration system (100) includes a housing (102) defining an interior space (104), a gas source (130), a gas inlet (134) fluidly coupled to the gas source (130) to permit the introduction of a gas to the interior space (104) of the housing (102). The housing (102) further includes a fluid inlet (108), a fluid outlet (114), and filter media (116) disposed proximate the fluid outlet (114). The housing (102) is at least partially immersed in used cooking oil (150) and gas pressure in the interior space is maintained at a first pressure level at which used cooking oil flows into the interior space. The gas source (130) increases the gas pressure in the interior space to a second pressure level at which the used cooking oil flows through the filter media and exits the housing (102) through the fluid outlet (114). Flowing the used cooling oil through the filter media (116) reduces the concentration of one or more contaminants present at a first contaminant level in the used cooking oil to a second contaminant level.

Also disclosed is a fryer that includes a spreader bar that maintains an electric heating coil in the serpentine pattern. The spreader bar is coupled to the upper surface of the electric heating coil and is disposed at a predetermined distance away from the bottom wall.

A frying pan, from two inches to ten inches high, which includes an opening on the side of pan which connects through a removable filter screen holder to a hollow handle/spout that allows cooking oil and other liquids to be removed from the frying pan. By tilting and pivoting of the frying pan, the oil and other liquids can be caused to flow through the filter screen to then be dispensed exteriorly of the frying pan. The auxiliary handle/spout tilts slightly up so oil or liquids do not inadvertently drip out the hollow handle/spout when not desired.

The electrical fryer further includes: a knob mechanism comprising a knob presenting an oil filtering position and at least one heating position; an oil filtering control mechanism connected between the knob mechanism and the oil filter; a temperature control mechanism comprising a switch assembly being drivingly connected with the knob mechanism; wherein, the knob is turned so as to switch between the oil filtering position and said at least one heating position, and when the knob is turned to the oil filtering position, the knob mechanism drives the oil filtering control mechanism to open the oil filter and the knob mechanism controls the switch assembly to switch it off so that the electrical heater is not energized, and when the knob is turned to said at least one heating position, the knob mechanism controls the switch assembly to switch it on so that the electrical heater heats the inner pot.

Filter pan oil level sensor

A sensor assembly for determining the level of oil in a filter pan may include a load cell for sensing the amount of oil in the filter pan. The filter pan may be pivotable about a first end of the filter pan within a frame. The assembly may also include a lever pivotable about a fulcrum. A first end of the lever may support a second end of the filter pan. A second end of the lever may press against the load cell based upon downward pressure from the filter pan against the first end of the lever.
