The present disclosure is directed to an apparatus for rinsing and disinfecting utensils, on demand, with a controller operating the components that deliver a pro-determined volume or timed flow of water, and exposure time of sanitizer(s) to the intended objects. The spray embodiment has high performance conical spray nozzle(s) controlled by a controller that reduces water usage and that may vary depending on the viscosity of the material to be eliminated. The recirculating embodiment has a recirculating water system, with a controller operating the components that recirculate water throughout the system until the turbidity exceeds a chosen threshold, and displace with fresh water until the turbidity returns to a lower threshold. The water resumes recirculation until it again exceeds the chose turbidity threshold and the water in the system is again displaced by fresh water. Both spray and recirculating embodiments can contain multiple rinse stations.

WAREWASH MACHINE WITH VAPOR EXTRACTION UNIT

A warewash machine includes a chamber with a wash zone and front, left and right access openings. At least one spray arm is disposed to spray liquid toward the wash zone. A multi-sided hood assembly includes movable front, left, right and top wall sections, and is movable between a lowered and closed position for washing and a raised open position for inlet and outlet of wares. A stationary chamber rear wall includes an outlet opening fluidly connected with a vapor extraction unit at a back side of the rear wall. The vapor extraction unit includes an enclosure with a condenser therein, wherein incoming water to the machine from a cold water input passes through the condenser, wherein the enclosure includes an air outlet to surrounding ambient environment and at least one air mover.

A warewash machine arm mechanism includes a liquid supply shaft assembly including a rotatable sleeve bearing mounted thereon, and an arm assembly including an elongated interior liquid flow space along an arm body and one or more liquid ejection orifices. The arm assembly is releasably mounted to the supply shaft assembly via a latch mechanism of the arm assembly that engages the rotatable sleeve bearing such that the arm assembly rotates with the rotatable sleeve bearing during ejection of liquid from the liquid ejection orifices.
