Timing device for shrimp processing equipment
A shrimp processing machine includes an adjustable cutting assembly and an adjustable meat picking assembly. The adjustable cutting assembly is adapted to adjust between a first configuration that forms a cut having a first length on a shrimp and a second configuration that forms a cut having a second length on the shrimp. The adjustable cutting assembly is further adapted to adjust between a first position that forms a cut having a first depth on the shrimp and a second position that forms a cut having a second depth on the shrimp. The adjustable meat picking assembly is adapted to rotatably adjust when a meat picker contacts the shrimp to remove shrimp meat from a shrimp shell.
Crab processing machine and method, and crab eviscerating disc therefor
A crab eviscerating disc is used in a crab processing machine and a method for processing a crab to a market condition. The disc is used to mill a groove along the underside of a crab body without completely cutting the crab body. Each tooth on that disc has a cut clearance angle of zero degree, and a hook angle of zero degree. Because of these teeth, the depth of the groove is limited by a bony plate and a bony ridge in the crab body. The visceral cavities of the crab body are cleaned by high pressure water sprays oriented in the groove while the crab body is still attached.
Shrimp processing apparatus and methods
Apparatus and methods for deheading and peeling shrimp hydraulically using the Venturi Effect. A shrimp-laden fluid is pumped through a conduit system including one or more venturi tubes. The acceleration of the fluid through the venturis detaches the heads and loosens or detaches the shells from the shrimp. The venturis may be used in conjunction with a roller peeler to increase peeling quality. An inspection station receives shrimp from the roller peeler and directs incompletely peeled shrimp back to the peeler or one or more of the venturis.
DEVICE AND METHOD FOR SHELLING CRABS
A crab butchering machine removes the carapace, mandibles and tail from a crab by timing actuation of tools depending upon the measured dimensions of the carapace. A measuring tool determines the location of the front and rear of the carapace relative to the saddle, securing and advancing the crab through the machine. The positions of the ends of the tools that operate on the crab are known. After measuring, the crab is advanced into a calculated position relative to a first tool, whereby an arm moves upwards, separating the carapace from the crab. The crab is next advanced past a second tool that lifts the carapace away from the crab carcass, allowing a third tool to move upwards, separating the carapace and tail from the carcass when the saddle is in a second calculated position. The remaining leg clusters are separated and released from the saddle for further processing.
MEAT TENDERNESS BY COLLAGEN DEGRADATION USING HIFU
Disclosed herein are systems for tenderizing meat samples using High-Intensity Focused Ultrasound (HIFU) comprising one or more transducer arrays. Further disclosed are methods and uses of the systems to tenderize meat samples.

Lobster cleaning tool
The present invention is a tool used to clean and remove the lobster's intestinal tract, effortlessly and safely. The present lobster cleaning tool is made of high tensile strength plastic. It has a plastic handle with a soft rubber non-slip grip built for comfort. Attached to the handle is a shaft with a set of plastic barbs attached to it. These are used to attach to the intestinal tract inside the lobster tail. The tool is designed with a tamper proof plastic clear cover for safety purposes.
Crab Meat Removal Device and Method For Removing Meat
A crab meat removal device that is extremely easy and fast to remove crab meat and eliminates the need for traditional more tedious devices and methods associated with removing crab meat. The crab meat removal device includes a handle, an elongated stem, and a contact head. The contact head may be circular or oval and may push or pull the crab meat from the crab leg that accommodates the anatomy of the crab shell and tendons. The crab meat removal device may be made from stainless steel that is subjected to an electro phasing process to prevent corrosion and to meet Food and Drug Administration (FDA) rules and regulations. The crab meat removal device also includes a corresponding method for removing crab meat.
SINGULATION AND SEPARATION SYSTEM FOR A SHRIMP PROCESSOR
A separation and singulation system for presenting shrimps or other product individually to a processor. The separation and singulation system includes a divider pan that separates a layer of shrimp into several lanes, a shaker pan that receives the lanes of shrimp and agitates them to separate clumps of shrimp and a flume for providing further singulation and acceleration of the shrimp. The singulated, separated shrimps are then sent to a processor.
