A dairy product comprising a sweetened dairy composition with a mass ratio of lactose to glucose equal to 1.0:2.7 to 2.6:1.5 and a mass ratio of lactose to galactose equal to 1.0:2.2 to 2.6:1.1. In a second aspect, a method comprises hydrolyzing lactose in the starting dairy composition in a lactase-catalyzed hydrolysis reaction and deactivating the reaction to provide a lactose percent conversion of 46 to 80 wt. %. In a third aspect, a dairy product comprises a fermented sweetened dairy composition comprising a lactose:glucose mass ratio of 0.01:2.4 to 1.0:1.0 and a lactose:galactose mass ratio of 0.01:2.7 to 1.0:1.0. In a fourth aspect, a method comprises hydrolyzing and fermenting lactose in a starting dairy composition, thereby providing a fermented sweetened dairy composition with a lactose percent conversion of 80 to 100 wt. %.

The present invention relates to a method for preparing a spray-dried dairy powder for forming a milk beverage when dissolved in a beverage medium, the method comprising: forming a dairy composition by: (i) adding a sugar composition to a dairy liquid; or (ii) blending a sugar solution with a dairy liquid, and spray-drying the dairy composition to form a spray-dried dairy powder comprising amorphous sugar, wherein the sugar composition or the sugar solution provides from 10 to 40 wt. % sugar by weight of the spray-dried dairy powder and wherein the sugar is selected from sucrose, lactose and a mixture thereof.

The object of the present invention is to provide a method for manufacturing solid milk having suitable hardness for practical use by manufacturing powdered milk having good compaction moldability.

In the manufacturing method of solid milk of the present invention, powdered milk for manufacturing solid milk is produced (S100), and then solid milk is produced by produced powdered milk. This manufacturing process (S100) comprises a gas dispersal process (S112) and a spray drying process (S114). In the gas dispersal process (S112), a prescribed gas is dispersed into liquid milk which is an ingredient of the powdered milk. In the spray drying process (S114), the liquid milk having a dispersed prescribed gas is sprayed, and the sprayed liquid milk is dried. By performing these processes, powdered milk is obtained. Solid milk is manufactured by solidifying the powdered milk.

In the spray drying process (S114), the liquid milk having a dispersed prescribed gas is sprayed, and the sprayed liquid milk is dried. By performing these processes, powdered milk is obtained. Solid milk is manufactured by solidifying the powdered milk.

Also provided is the composition in the form of a powdered food product, and a beverage product comprising the composition in the form of a powder which has been reconstituted in a liquid.
