Provided herein are compositions with enhanced saltiness or reduced sodium content per weight when compared to the salt component thereof, and methods for the preparation thereof.
AN EXTRACT OF PERSEA
Suggested is an extract of Persea, in particular Persea americana (Avocado) comprising at least 90 wt.-percent avocado polyols and preferably at least 95 wt.-percent avocadene, obtainable or obtained according to the following steps: (a) providing a source of Persea; (b) subjecting said source of Persea to an extraction step using organic solvents to obtain a first extract; (c) subjecting said first extract to saponification to obtain a second extract; (d) adding a source of calcium to said second extract to precipitate calcium soaps; (e) subjecting the product of step (d) to a separation step to obtain a third extract and said precipitated calcium salts; and optionally (f) subjecting said third extract to purification.
TASTE MODIFYING COMPOSITIONS AND USES THEREOF
The present disclosure generally relates to various formulations and uses of the compound: N-(1-((4-amino-2,2-dioxo-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)-2-methyl-propan-2-yl)isonicotinamide, which is also referred to herein a “TM1” and comestibly acceptable salts thereof. In some aspects, the disclosure provides compositions that include TM1, or a comestibly acceptable salt thereof. In some embodiments, the compositions are ingestible compositions, including, but not limited to, packaged food and beverage products and tabletop sweeteners. In some aspects, the disclosure provides certain compositions that include such flavanone derivatives, such as compositions that include such flavanone derivatives and one or more other sweeteners. In some other aspects, the disclosure provides methods of reducing the caloric content of a sweetened article, such as a sweetened food or beverage product.

Steviol Glycoside Compounds, Compositions For Oral Ingestion Or Use, And Method For Enhancing Steviol Glycoside Solubility
Novel steviol glycoside compounds characterized by a first group of four glucopyranose residues attached via the number 13 carbon (C13) of the steviol moiety and a second group of two or three glucopyranose residues attached via the number 19 carbon (C19) of the steviol moiety are described, and exemplified by compounds 1-4. These compounds can be present in a composition with other steviol glycosides (e.g., Reb D and Reb M) to enhance their solubilities. Accordingly, the novel compounds can facilitate the preparation of aqueous compositions having a higher concentration of steviol glycosides. A steviol glycoside composition including one or more of compounds 1-4 can be used as a sweetener composition to sweeten other compositions (sweetenable compositions) such as foods, beverages, medicines, oral hygiene compositions, nutraceuticals, and the like.
TASTE MODIFYING INGREDIENT
A method for making a taste modifying ingredient is provided. The method includes a) heating millet grain at from about 100° C. to about 300° C. for about 2 minutes to about 30 minutes to; b) treating the millet grain with a solvent to obtain an extract, and c) recovering the extract, for use as a taste modifying ingredient.
