A method and device for producing high quality alcohol beverages, including liquor, cordial, tincture, whiskey, cognac, brandy, vodka, rum, gin, wine, cocktail, etc., is based on the action of hydrodynamic cavitation treatment of components of alcohol beverages. The fluid flow moves at a high rate through a multi-stage blending hydrodynamic device and multi-stage cavitation device to generate hydrodynamic cavitation features in the fluid flow. The cavitation features generate changes in the velocity, pressure, temperature, chemical composition and physical properties of the liquid. Hydrodynamic cavitation processing provides effective blending of components and homogenization of alcoholic beverage, improves its organoleptic qualities.

Colorant compositions and methods of use thereof
Natural blue colorant compositions and methods of use thereof are provided. The colorant compositions include at least one acylated anthocyanin, such as a diacylated anthocyanin. The colorant composition can further include a buffer solution having a pH from about 6.0 to about 8.0 and a metal ion or salt form thereof. The colorant compositions can be derived from a natural product and provide a stable, blue colorant that can be used in food products.

The present invention is possible to beautifully color a surface of a gel-like food by providing divalent metal ions or metal ions having a greater valence on the surface of the gel-like food and by applying thereto an aqueous solution containing a pigment, as well as a gelling agent that reacts with the divalent metal ions or the metal ions having a greater valence and causes gelation. To provide the divalent metal ions or the metal ions having a greater valence on the surface of the gel-like food, there are a method in which components that form the divalent metal ions or the metal ions having a greater valence are kneaded into the gel-like food itself and a method in which an aqueous solution containing the divalent metal ions or the metal ions having a greater valence is applied to the surface of the gel-like food.

METHOD FOR MANUFACTURING A FOOD PRODUCT
A method for manufacturing a food product, comprising mixing dehulled fava bean flour and vegetable protein flour to obtain a basic mixture, wherein the basic mixture has 15-30 wt-% of dehulled fava bean flour and 70-85 wt-% of vegetable protein flour; adding water to the basic mixture in an amount of 30-70 wt-% of the total weight of the basic mixture and water to obtain a hydrated mixture; kneading the hydrated mixture at a temperature of 100-150 C. in an extruder, to form a dough; and allowing the dough to exit the extruder via a cooling die to form the food product, wherein the temperature of the food product at the exit of the cooling die is 50-95 C.
