The present invention discloses a -galactosidase mutant, and a preparation method and application thereof, belonging to the fields of gene engineering and enzyme engineering. Amino acids of specific sites in the -galactosidase are mutated, the -galactosidase is transferred into a recombinant bacterium, and enzymatic transformation is performed under optimized conditions, so that the yield of galactooligosaccharide produced by the mutant reaches 59.8%, which is increased by about 70% as compared with that of wild enzyme, thereby implementing the increase of the galactooligosaccharide yield. The present invention has very high industrialized application value.

Enzyme-treated bovine colostrum, preparation method thereof, composition, and foods and beverages

An object of the present invention is to provide a method of preparing an enzyme-treated bovine colostrum, comprising a step of bringing a bovine colostrum into contact with -galactosidase, and a pharmaceutical composition comprising the enzyme-treated bovine colostrum. The enzyme-treated bovine colostrum is useful for treatment, prevention, amelioration and maintenance of remission of diseases such as a cancer and an infectious disease.

What are proposed are low-calorie food products comprising or consisting of (a) at least one milk component and (b) specific galactooligosaccharides (GOS).

Dairy product and process

A method of producing sialyloligosaccharides a sialyloligosaccharides-containing source that also contains carbohydrates and minerals. The process includes subjecting the source to a temperature of from about 67? C. and (i) filtration with a heat-resistant filter at a temperature of about 35 to about 95? C. to produce a first retentate and first permeate, or (ii) centrifugal separation to produce a light phase and a heavy phase and filtration of the light phase at a temperature of about 50 to about 70? C. to produce a first retentate and first permeate, (b) nanofiltration of the first permeate, or nanofiltration and diafiltration of the first permeate, to produce a second retentate and second permeate, and (c) concentration of the second retentate, to produce a sialyloligosaccharide-containing extract. Additionally, the invention relates to a sialyloligosaccharide-enriched composition comprising at least 3-sialyllactose and 6-sialyllactose and its use in, for example, nutritional and infant formulas, and for maintaining or improving cognitive function.

METHODS FOR MAKING A YOGURT PRODUCT

Methods for converting cow's milk into a low pH, ready to drink yogurt product having the compositional attributes of human milk include combinations of ultrafiltration, nanofiltration, reverse osmosis, and diafiltration using microfiltration membranes, followed by heat treatment and fermentation.

DAIRY-BASED ZERO SUGAR FOOD PRODUCT AND ASSOCIATED METHOD

Methods of making a zero sugar dairy-based food product and a zero sugar dairy-based food product are provided. The dairy-based food product includes a protease, an acyl transferase, a lactase, a skim milk, at least one of an additional ingredient selected from a group consisting of a probiotic, an artificial flavoring, a natural flavoring, a cream, a vitamin, a pectin, an oil, and combinations thereof, and an amount of water. The dairy-based food product further includes a sugar content of between 0 wt % and 0.4 wt %.

The invention relates to the field of dry or powder dairy compositions. The present invention describes a method for producing a lactose reduced dairy powder comprising (i) treating a lactose comprising milk-based substrate with a first enzyme having transgalactosylase activity and a second enzyme having lactase activity to obtain a lactose reduced and galacto-oligosaccharides (GOS) comprising milk-based product (ii) preparing lactose reduced dairy powder from said lactose reduced and GOS comprising milk-based product.

Process for producing dairy products with a defined lactose content

A process for producing dairy products with a defined lactose content is suggested, comprising the following steps: (a) Ultrafiltration of a starting milk for producing a first permeate P1 and a first retentate R1; (b) Reverse osmosis of the first permeate P1 for producing a second permeate P2 and a second retentate R2; (c) Decalcification of the second retentate R2; (d) Ultrafiltration of the decalcified product of step (c) for producing a third permeate P3 (lactose concentrate) and a third retentate R3 (mineral concentrate); (e) Mixing the first retentate R1 with such an amount of the third permeate P3 and the third retentate R3 each so that a standardized dairy product with a defined concentration of lactose and salts is obtained.
