The basket is correspondingly sized and shaped to fit the pot interior. The basket is movable about the hinge between cooking and food discharge positions. The lid is pivotally attached to the pot. The lid is movable between a cooking position wherein the lid covers the pot upper opening and food discharge position wherein the lid rotates at least 180 degrees from said cooking position, forming a tray for receiving food discharged from the basket. A steamer plate can optionally be connected to the basket at the basket rim and/or basket side walls.

COMBINATION PRESSURE AND OPEN FRYING APPARATUS

A fryer apparatus includes a selectively closeable frypot to alternate a mechanism of operation between an open frying platform and a pressure frying platform. The selectively closeable frypot includes a cover with a locking mechanism disposed within the cover that is actuated by rotation of a handle such that the footprint of the selectively closeable frypot may be sized comparable with a typical open frypot to accommodate space constraints of limited service restaurants. The fryer apparatus may also include a pressure assist feature so that the selectively closeable frypot efficiently reaches a desired pressure for smaller batches of food product when used as a pressure frying platform.

Different embodiments generally comprise a cover, having a number of flaps, doors or plates that open upwardly or downwardly. Flaps/doors may be solid, perforated or the like. The cover can be maintained in a suitably rigid closed locked position, for example, by a locking mechanism, preventing the basket(s), body parts, or other items from unintentionally being placed in the fryer. In such embodiments, the cover also prevents the loss of heat from the oil. In various embodiments, the cover and/or the door may be maintained in a closed position, though not necessarily locked, preventing heat loss from the oil. In such embodiments, the cover may be vented. In various embodiments, the cover and/or the door may include an attachable or an integrated fire extinguishing mechanism.
