A deep fryer system includes a deep fryer that includes a fuel tank, a burner and a hose that is fluidly coupled between the fuel tank and the burner. The burner produces a flame thereby facilitating the burner to heat a container filled with a fluid. A cart is provided and each of the fuel tank, the hose and the burner is removably positioned on the cart. A box is provided and the box is positioned on the cart. The burner is positioned within the box and the container is positioned within the box. The box inhibits the fluid in the container from escaping the box thereby reducing a fire hazard with respect to the fluid when the fluid is heated.

A convection fryer is composed of a main oil circulating pump, a tube heat exchanger, a fry tank, a continuous oil filtration system, an oil storage holding tank filter frame and filter bag, and a main circulating pump. Cooking oil is pumped by the main circulating pump to the heat exchanger to the fry tank. Oil flows from the tank through the filter screen to the pump trough to the main circulating pump completing the oil circulating loop. At the end of the cooking day the oil is drained to the holding tank for storage while the fry tank is cleaned. In the next fry cycle the oil is pumped up out of the holding tank to the fry tank to start the cooking process all over again.

In some embodiments, the support assembly may include a first support segment and a second support segment positionable across from one another, where each support segment has a base ledge, e.g., for supporting opposite sides of the removable tray. In some embodiments, the support assembly may include a partial enclosure defining an opening for permitting passage of grease, e.g., from the frying apparatus to the removable tray.

The filter pan has a bottom wall surrounded by four side walls and an inlet passage configured to receive cooking medium into the filter pan. A filter element is removably attached to the bottom wall of filter pan and extends in a lateral direction along a length of the fryer apparatus and may have two bends spaced laterally from each other. A plug may be attached to the filter element and an outlet passage attached to the plug and configured to discharge the cooking medium.
