DRAINAGE DEVICE FOR A COOKING APPLIANCE
A drainage device (10) for a cooking appliance, such as a braising pan or flyer, characterized in that it comprises a collector (12) having an inlet orifice and an outlet orifice that are connected together by a collection chamber, and in that the device also comprises means (16, 62) for moving and guiding the collector, said means being designed to engage with said appliance in order to allow the collector to be moved between at least two positions.
TUBE FOR HOT FOOD FLUIDS
A tube for hot food fluids includes an inner layer made of hydrogenated nitrile rubber (HNBR), one or more intermediate layers, and an outer covering layer made of elastomeric material. For example, the outer covering layer could be made of HNBR. One or more of the intermediate reinforcement layers include at least one textile reinforcement layer that is resistant to high temperatures. One or more of the intermediate reinforcement layers may further include two layers of textile reinforcement resistant to high temperatures, with the interposition of a filler layer made of elastomeric material.
CONTINUOUSLY OPERATING FILTERING APPARATUS
A deep fat fryer with continuous oil filtering and purging of sediments therefrom during uninterrupted fryer operation is provided. The filter includes a cylindrical hollow housing with a first end and a second end and a hollow cylindrical screen with a longitudinal axis and first and second ends. The screen is disposed coaxially within the hollow housing to define an annulus therebetween. A piston mounted within the screen and reciprocatingly movable along the longitudinal axis between the first and second ends of the screen. A pump, seal, and associate motor are provided to provide continuous oil flow through the filter and the remainder of the fryer. A heat exchanger is provided downstream of the pump to transfer heat from the fryer to the oil flowing through the heat exchanger.
SYSTEM TO REMOVE FOOD PARTICLES FROM A VAT FOR CONTINUOUSLY COOKING FOOD
An oil receiving system is provided and includes a housing with front, side, and a bottom wall, the front wall configured to be connectable to an outer edge of a vat, the combined front, side, and bottom walls form a plenum for receipt of oil therein. A fluid connection is disposed in either the side wall or the bottom wall, the fluid connection vertically disposed below a top edge of the front wall. A piped system allows flow from within the plenum through the fluid connection. A valve is disposed at or proximate to the fluid connection and operable to either allow flow from the plenum through the fluid connection or prevent flow from the plenum through the fluid connection. The oil receiving system can be provided with a vat for frying foods or as a separate item that is attached to a vat after the vat has been installed.
Continuously operating filtering apparatus
A deep fat fryer with continuous oil filtering and purging of sediments therefrom during uninterrupted fryer operation is provided. The filter includes a cylindrical hollow housing with a first end and a second end and a hollow cylindrical screen with a longitudinal axis and first and second ends. The screen is disposed coaxially within the hollow housing to define an annulus therebetween. A piston mounted within the screen and reciprocatingly movable along the longitudinal axis between the first and second ends of the screen. A pump, seal, and associate motor are provided to provide continuous oil flow through the filter and the remainder of the fryer. A heat exchanger is provided downstream of the pump to transfer heat from the fryer to the oil flowing through the heat exchanger.
Bulk cooking oil distribution system
A portable cooking oil distribution device for filling remote fryers with fresh cooking oil. In other embodiments the device can also collect used cooking oil from the fryer. In one embodiment, a portable device includes a fresh tank, a three-way valve connected by piping to the fresh oil tank, a pump connected by piping to the three-way valve, and a nozzle connected by piping to the pump, the nozzle having an outlet tube connected to the piping between the pump and the nozzle. The device may also include a used oil tank, a second three-way valve connected by piping to the used oil tank, a second pump connected by piping to the three-way valve, and piping connecting the second pump to the nozzle, where the nozzle includes a inlet tube connected to the piping between the pump and the nozzle.
SYSTEM TO REMOVE FOOD PARTICLES FROM A VAT FOR CONTINUOUSLY COOKING FOOD
An oil receiving system includes a housing proximate to a vat and a fluid connection disposed in either the side wall or the bottom wall, the fluid connection vertically disposed below a top edge of the front wall and a system to remove the contents within the housing through the fluid connection. The housing is connected to a cooking vat by a transition between the outer edge of the vat and the front wall of the housing, the transition extends at an upwardly extending orientation from the outer edge of the vat to the front wall of the housing, wherein a conveyor extends along the transition, the conveyor has a first portion that moves along the transition from over the outer edge of the vat and toward and over the front wall of the housing, and a second portion that moves along the transition from over the front wall of the housing and toward and over the outer edge of the vat.
Systems and methods for frying food products
Some implementations of the described methods relate to a process for frying coffee beans (and/or another food product) in a fry medium (such as cooking oil) and then centrifuging the coffee beans (and/or other food product) to remove a significant portion of the fry medium. Although the frying and centrifugation can occur in separate devices, in some cases, the described systems comprise a device that acts as both a fryer and a centrifuge. Indeed, in some cases, after the coffee beans (or other food product) has been fry roasted in a perforated container (e.g., a basket), the fry medium is drained from the container, and container is spun. In some cases, liquid nitrogen is also applied to the beans (or other food product), before and/or after being fry roasted. Other implementations are described.
Cooking assembly comprising an electrical cooking appliance and a draining base
The invention relates to a cooking assembly (1) which comprises an electrical cooking appliance (2) and a draining base (3), the electrical cooking appliance (2) comprising a vessel (10) provided with a draining device (60) that has a valve (61), the draining base (3) comprising a draining receptacle (70) and a cover (80) for said receptacle, the receptacle cover (80) forming a passage (80a) for discharge of the cooking bath in the draining receptacle (70), said draining base (3) having a control member (4), and the cooking assembly (1) having a draining configuration in which the draining base (3) supports the electrical cooking appliance (2) and in which the control member (4) moves the valve (610 into the open position. According to the invention, the electrical cooking appliance (2) rests on the receptacle cover (80) when the cooking assembly (1) is in the draining configuration.
BULK COOKING OIL DISTRIBUTION SYSTEM
A portable cooking oil distribution device for filling remote fryers with fresh cooking oil. In other embodiments the device can also collect used cooking oil from the fryer.
