Light stable natural yellow colorant systems in pickled and fermented vegetable applications
The present invention comprises a novel natural yellow colorant system to enhance the appearance of pickled and/or fermented vegetable products. Individually all-natural yellow pigments failed light stability investigations in pickled and/or fermented vegetable products—either the yellow hue of the brine solution faded, or the pulp/skin of the vegetable turned white, or both. Surprisingly combinations of these same individual natural yellow pigments not only created brine hues and vegetable coloring comparable to FD&C Yellow #5 products but remained stable in accelerated light stability investigations designed to mimic the real-time shelf-life of the products.
POWDERED PROCESSED SESAME PRODUCT AND METHOD FOR PRODUCING SAME
To provide a powdered processed sesame product with a reduced fat and oil content and excellent handleability, while the flavor of paste sesame is retained, and a method for producing the same. A processed sesame product according to the present invention is a powdered processed sesame product containing a ground product of sesame, and the ground product of sesame has an oil content of smaller than 30% by mass relative to the total mass of the ground product and has a 10% cumulative diameter of 30 μm or smaller and preferably 20 μm or smaller and a 50% cumulative diameter of 70 μm or larger, and the processed sesame product has a good balance of the paste sesame feel, the strength of flavor, and the strength of taste.
PROTECTIVE COATING FOR PLANTS AND POSTHARVEST PLANT MATTER
The present invention relates to a method for forming a protective coating on a plant tissue following the consecutives steps of: (a) providing a plant having an external surface, wherein a portion of the external surface includes an exposed surface; (b) applying a first aqueous solution that contains a crosslinking agent to the external surface of the plant; and (c) applying to the external surface of the plant a second aqueous solution that contains a polysaccharide which is susceptible to crosslinking by the crosslinking agent, thereby forming a protective coating on the exposed surface of the plant. Further provided is a postharvest plant matter that includes a first segment covered by natural skin, and a second segment having an exposed surface that is coated by a protective coating that contains a polysaccharide with the first segment being essentially free of the protective coating.
KIMCHI POWDER AND METHOD OF PREPARING THE SAME
Provided is a method of preparing kimchi powder. The method includes preparing kimchi, aging and storing the kimchi at low temperature, freeze-drying the kimchi, and grinding the kimchi into powder, wherein, in the aging and storing of the kimchi at low temperature, the kimchi is aged and stored at −2° C. for three months, and the freeze-drying of the kimchi is performed after the aging and storing of the kimchi at low temperature is performed.
Food briner
Brining apparatus includes a refrigerator, a sink, and a hollow housing to receive brining fluid and a turkey. The housing has an open mouth at the top. The apparatus also includes a cover which sealingly removably engages the mouth of the housing. The housing includes a valve to drain brining liquid from the housing. The housing and cover are shaped and dimensioned, when assembled, to fit in the refrigerator for cooling, and to fit in the sink to drain brining liquid from the housing.

A food processing system includes at least one receptacle containing a composition of water and insoluble solids, a centripetal force-based solid/liquid separator having an inlet, a solids outlet, and a liquid outlet, and a pump able to direct the composition from the receptacle to the inlet of the separator. The separator is configured to separate the composition into a solids stream including the insoluble solids and a liquid stream including water and to direct the solids stream through the solids outlet and the liquid stream through the liquid outlet.
Method of processing poultry and other meat to reduce or eliminate <i>Salmonella</i>
A method for reducing the incidence of Salmonella in harvested meat comprising treating the meat with an effective electrostatically charged antimicrobial solution comprising a blend of lactic and citric acids in proportions containing a predominance of lactic acid from 65:5 wt./wt. to 77:3 wt./wt. lactic acid to citric acid; and the pH of the solution is less than about 3.2.
SMOKE GENERATING ASSEMBLY FOR AN INDOOR SMOKER
A smoke generating assembly for an indoor smoker includes a smoke barrel having a rotating auger positioned therein. The smoke barrel may be supplied with combustible material at a first end of the smoke barrel and the auger may be intermittently rotated to advance the combustible material toward a second end of the smoke barrel and over a smoldering heater to generate a flow of smoke. The smoldering heater may be spaced apart from the smoke barrel by an igniter gap that permits pellet dust from the combustible material to fall into the container below, leaving only solid combustible material to pass through the smoldering heater for combustion.
Cardboard container for active packaging of fresh fruit and vegetables and production method of same
This invention is, in general, related to the technological field of packaging of vegetable products, such as whole fresh fruits and vegetables that tend to have certain surface microbial load. Specifically, this invention relates to a new cardboard packaging which is characterised by having an antimicrobial active coating based on a polymeric compound in combination with essential oils forming inclusion complexes with cyclodextrins. Vapours of essential oils are emitted from the cardboard as sufficiently high relative humidities are reached in the vicinity of this coating which is next to the packed product, and these vapours have an antimicrobial action against fungi, yeasts and bacteria, which both spoil product quality and are pathogenic for consumers. This new packaging significantly achieves increasing food safety and the shelf life of foods packed therein.
Indirect air flow system
Disclosed is an outdoor cooking appliance with ductwork that directs heat and smoke more evenly in the cook chamber of the appliance. For example, the ductwork can extend from the heat source of the appliance and direct the smoke to openings in rack holders that then dispel the smoke into the cook chamber more evenly. The burn pot assembly can also be segregated from the grease pan to avoid the potential for grease fires.
