A machine for preparing coffee beverages comprises an infusion unit comprising an infusion chamber suitable to contain a quantity of coffee powder to be subjected to infusion, a grinding unit to grind coffee beans and obtain coffee powder, a water tank connected to the grinding unit, means for feeding and heating the water, and a dispensing unit fluidically connected to the infusion unit and configured to dispense the beverage prepared into a receptacle. The invention also concerns a method to regulate a machine for preparing coffee beverages.
Method for making and dispensing coffee-based beverages
A method for making and dispensing coffee-based beverages in machines includes increasing the water temperature inside a boiler and assembly to achieve preheating with to adjust the delivered thermal power. The method includes three dispensing steps. Preheated water at a selected temperature achieves a pre-infusion in a preset time or water volume without pressure in the hydraulic pump, wherein the coffee powder is only wet. Next, the coffee powder is infused by means of the use of a logic unit that manages the volume of dispensed water by a volumetric meter and at a preset, constant pressure as a function of the ground coffee and dispensed product weight. An amount by volume of water is dispensed and calculated to achieve a selected and preset brew ratio. Finally, post-infusion is achieved in which the hydraulic pump is deactivated for a time needed to reach by weight the programmed dose of dispensed product.

The upward flow extraction method can comprise loading extraction material into an extraction cell having a bottom portion and a top portion; introducing a first aliquot of extraction medium through the bottom portion of the extraction cell; expelling gas from the extraction cell through the top portion of the extraction cell; closing the top portion of the extraction cell and increasing the pressure in the extraction cell as extraction medium flows into the bottom portion of the extraction cell; stopping the flow of extraction medium into the extraction cell; steeping the extraction material in the extraction medium under pressure to produce an extract; and introducing a second aliquot of extraction medium through the bottom portion of the extraction cell to push extract through top portion of the extraction cell.
Cooking system power management
A cooking environment is described for allocating power between multiple cooking systems and providing a calculated amount of energy to a cooking system. The cooking systems can each include a receptacle and a heating/cooling element to heat a product within the receptacle. A controller can receive requests for power from the cooking systems. Based on the requests for power, the controller allocates an amount of time within a time period in which the heating/cooling elements of each cooking system receive electrical energy. The controller can also allocate specific intervals within the time period in which the heating/cooling elements receive electrical energy.

Provided are an apparatus and method that provides a brewing machine that produces a static water pressure with a variable water pressure. A first portion of an adaptor includes a peripheral wall that defines a region that receives heated water at a first pressure. A plurality of flanges protrude outwardly from the peripheral wall and cooperate with a group head of the brewing machine that is configured to receive and support a portafilter. A second portion is separate from the first portion, and arranged below the first portion to receive a portafilter basket. A conduit conveys water between the first portion and the second portion. A pressure regulator in fluid communication with the internal passage adjusts the heated water from the first pressure to a second pressure that is less than the first pressure, to be introduced to coffee in the portafilter basket at the second pressure.
