A method and a system of devices for continuous sterilization or pasteurization of foodstuffs contained in specific rigid containers, followed by continuous deep-vacuum sealing of the containers. The evacuation is obtained by rotary steam injection between the lids and the receptacles followed by sealing of the containers and cold showering that brings about condensation of the steam inside the container and consequently a deep vacuum. This results in a long-lasting deep-vacuum preservation of the food under organoleptic and nutritional quality conditions with a drastic reduction in the cooling time of the containers after sterilization or pasteurization, The reduction in cooling time is obtained by a low-temperature boiling under vacuum, which boiling is homogeneously distributed throughout the whole of the container. It is particularly suitable for pasty or liquid products or products in chunks included in a liquid or pasty mixture.

A plastic container comprises an upper portion including a finish defining an opening into the container, a lower portion including a base defining a standing surface, a sidewall extending between the upper portion and the lower portion, the sidewall defining a longitudinal axis, and at least one substantially transversely-oriented pressure panel located in the lower portion. The pressure panel is movable between an outwardly-inclined position and an inwardly-inclined position to compensate for a change of pressure inside the container. The standing surface defines a standing plane, and the entire pressure panel is located between the standing plane and the upper portion of the container when the pressure panel is in the outwardly-inclined position.

A mass of divisible food in a sealed bag is placed between a first part of a frame having a plurality of walls depending from a common plane and forming a plurality of cavities and a second part of the frame having cavities that correspond with and confront the cavities of the first part. The second part is forced toward the first part to pressurize the divisible food in the bag and force the bag to occupy the cavities. Then, the frame, bag and contents are placed in a freezer.

An apparatus for thermally processing food products in sealed packages comprises heating/cooling chambers with an endless conveyor guided through them with product carriers connected thereto. A side wall 11 of the carrier 10 comprises slits 20 which open out towards insertion openings of the respective insertion spaces 17. Operating members are provided which comprise load bearing organs 32 with operable holding means 33 for picking up and carrying packages 27. The load bearing organs 32 are movable in an insertion direction x while projecting through the slits 20 during placing of packages 27 into the insertion spaces 17.

An apparatus for forming sealed pouches comprising: a rotatable base forming drum having an outer surface with a plurality of base tooling cavities in the outer surface; a base stock supply mechanism for feeding a base stock film of material along a base stock path, a portion of the base stock path extending along the outer surface of the base forming drum; a system for displacing the base stock film into the base tooling cavities to form a pocket of base stock film material within each base tooling cavity; a material feed mechanism for feeding at least one material into each pocket of the base stock film; a rotatable lid forming drum having an outer surface with a plurality of lid tooling cavities in the outer surface; a lid stock supply mechanism for feeding a lid stock film of material along a lid stock path, a portion of the lid stock path extending along the outer surface of the lid forming drum; a system for displacing the lid stock film into the lid tooling cavities to form a lid recess of lid stock film material within each lid tooling cavity; a material feed mechanism for feeding a material into each lid recess of the lid stock film; and mechanism bringing the base stock web and the lid stock web into contact under pressure. In one form, the material fed into the lid recesses is a hardenable material and cooling is used to cool the lid recesses.

The process includes automatically conveying the containers past a processing station for the treatment or processing by or through a conveying device and then inserting the containers into a transport or packaging container having a bottom, a circumferential side wall and an insertion opening opposite to the bottom. In some embodiments, a plurality of containers are placed on a flat supporting base so that the bottoms of the containers directly rest on the flat supporting base; the containers, while resting on the flat supporting base, are conveyed to a processing station by the conveying device to be treated or processed; and after the treatment or processing of the containers, the transport or packaging container is placed on the flat supporting base so that all the containers of the plurality of containers are accommodated in the transport or packaging container.
