Food for human consumption is smoked by providing smoke, removing one or more polycyclic aromatic hydrocarbons (PAHs) from the smoke and contacting the food with the treated smoke, or smoking the food and then removing the PAHs from the smoked food. PAH removal is selective, to remove the PAHs that contain 4 or more benzene rings, in particular without significantly changing the volatile profile of the smoked food. A selective filter is provided, as is apparatus comprising a smoke generator, a chamber in which to smoke food, and the selective filter, disposed between the smoke generator and the chamber.

An apparatus and method for treating air. A housing can enclose a heating zone and an oxidizing zone positioned downstream of the heating zone with respect to a flow direction of the air being treated. A catalyst in the oxidizing zone oxidizes contaminants from the air, and an air mover positioned is configured to move air from an air inlet through the housing to an air outlet. An air treatment cycle can include an air cleaning mode at a high air flow and a self-cleaning mode at a lower air flow. A heater is operated during the self cleaning mode to oxidize contaminants that on the catalyst from the air cleaning mode.

System and method for regulating the flow of smoke in an indoor smoker

An indoor smoker includes a cabinet including an exhaust duct, a smoking chamber, a firebox, and a bypass duct extending between the firebox and the exhaust duct. A damper is movable between a first position for closing the smoking chamber when a firebox temperature is outside a desired range and a second position for blocking the bypass duct when the firebox temperature is within the desired range. The damper thus regulates the flow of smoke such that only good smoke is directed into the smoking chamber, while bad smoke is routed directly to the exhaust duct.

The present invention is directed to a process for removing gas phase nitrogen-based compounds by absorption into a liquid stream. The absorbed nitrogen-based compound is reacted with an acid to produce a nitrogen-based product. The nitrogen-based compound, the acid, and the resulting nitrogen-based product may be organic compounds, i.e. compounds derived from animal matter or plant matter and the nitrogen-based product may be a fertilizer that may be used in organic agriculture or the production of certified organic foods. Processes are also described for removing nitrogen-based compounds from a liquid stream to produce a nitrogen-based product, including organic fertilizers. One process includes producing cavitation bubbles into which a liquid phase nitrogen-based compound is stripped, followed by absorption to produce a nitrogen-based product. Another process includes the use of a degassing membrane to remove a liquid phase nitrogen-based compound that is degassed to produce a nitrogen-based product, including organic fertilizers.

A cooking apparatus and method for use of the same are disclosed that utilize forced convection and radiant heating cooking. In one embodiment, the cooking apparatus includes an oven housing defining a cooking chamber, a circulation chamber, and a catalyst chamber. The catalyst chamber is superposed to the circulation chamber and the circulation chamber is superposed to the cooking chamber. Heating elements are located in at least one of the cooking chamber and the circulation chamber. An airflow circulation loop is located between the cooking chamber and the circulation chamber. An exhaust airflow path is provided from the circulation chamber to the catalyst chamber to an exterior of the oven housing. A fan subassembly is located within the oven housing and the fan subassembly circulates convection air along the airflow circulation loop with a portion of the convection air being diverted into the exhaust airflow path.
