The invention relates to a reliable cutting set system for a meat mincing machine. The mutually matched coding (14, 24) between knife pins (10) and the cutting set element (20) prevents an incorrect installation of the cutting set element (20) after a cleaning process or during the initial assembly, thereby increasing the operational safety. The invention allows a detection of the correct cutting set element (20) of a cutting set system and thus an unambiguous allocation of the cutting set element to a knife pin (10) of a cutting set system.

Blade

The invention relates to a blade, more particularly for a meat grinder. The blade (10) has a collar-type sealing ring (18) between the hub (11) and the inner ends of the blade wings (14). The sealing ring (18) has the same height as the hub (11) as the adjacent sealing ring (18) has or the hub (11) has a smaller height. The hub (11) thus does not impede the rubbing of the cutting edges (16, 17) of the blade (10) or the rubbing of the sealing ring (18).

Blade

The invention relates to a blade, more particularly for a meat grinder. The blade (10) has a collar-type sealing ring (18) between the hub (11) and the inner ends of the blade wings (14). The sealing ring (18) has the same height as the hub (11) as the adjacent sealing ring (18) has or the hub (11) has a smaller height. The hub (11) thus does not impede the rubbing of the cutting edges (16, 17) of the blade (10) or the rubbing of the sealing ring (18).

Second feed screw may include a plurality of flights arranged in a split flight configuration including one or more ingress end flights and one or more egress end flights.

Meat grinding reclamation system

A meat grinding reclamation system is disclosed herein. The system uses a first meat grinder coaxially coupled to a second meat grinder. The first meat grinder separates meat from undesired material such as gristle, hard fat, connective tissue, sinew, and bone. Most of the meat is ground, while the undesired material is remixed into a small portion of the meat and is moved from the first grinder into the second grinder. The second grinder separates remaining meat and carrier meat from the undesired material, grinding the reclaimed meat and moving it into a bin with the originally separated meat. The waste material is moved to a waste bin. Pressurized air may be used to prevent the waste material from becoming clogged in the system.
