An apparatus for cutting an item, such as a roast, a bagel, or a loaf of bread, comprising first and second wall devices, a cutting board device, and a base. The first and second wall devices may each have a plurality of vertical slots which are parallel and spaced apart from each other. The first and second wall devices may be configured to be attached to the base in a manner such that the first wall device projects out from the base, at an angle. The cutting board device may include a cutting board body and pins for removably supporting the cutting board device by both the first and second wall devices so that first and second parts of the cutting board device rest on the first and second wall devices to thereby support and suspend the cutting board body above and substantially parallel to the base.

To secure the knife to the base, the knife is first inclined so that the notch faces the knife anchoring element and is then displaced in a translational motion towards the knife anchoring element until the knife enters slot and the notch engages the pivot, the knife is then pivoted towards the support surface, resulting in the knife being secured to the base.

Open slots are defined between adjacent tines of the plurality of tines. A subset of the tines are shaped between their first ends and their second ends to form slices of a containment basket which is curved in three-dimensions.

The lower assembly also includes a cam mechanism to activate the centering plates. A method involves depressing actuators to separate the centering plates, creating space for a food item. When the food item is placed on the holding plate, the actuators are released, applying equal force to center the food item. The device also includes a centering device and an actuator that, upon receiving force, engages the centering device to hold the item in a cutting position for the blade. The device cuts the item within about +/one-sixteenth of an inch.
