The internal compartment further includes a reservoir, configured to retain liquid, below the platform. The platform and/or support structure are configured to direct liquid exuded from the comestible mollusk material to the reservoir. Optionally, the reservoir comprises an absorbent material for absorbing liquid in the reservoir.

Cooking variables, such as the temperature and water content in the pod for cooking the ingredients, are measured by the device, and heat and water amounts can be adjusted as required for the recipe based on a thermal function associated with the recipe. The device comprises one or more sensors for determining the temperature and humidity inside the pod, and the temperature and/or humidity are adjustable depending on the thermal function associated with the particular pod, by controlling the amount of heat and/or water added to the pod. Pods that may be used with the cooking device have an elevated base layer providing a reservoir of water, provided by a water dispensing means, for adding steam to the contents of the pod through one or more openings in the floor of the pod, which also allow the draining of fluids, such as undesired fluids, from the food being cooked.

Each tray includes a rectangular plate and an outer continuous wall which protrudes from the peripheral edge of the plate at an obtuse angle, which enables multiple trays to be arranged as a nested stack. A plurality of thru-holes is provided in the sleeve for ventilation and is arranged so that select thru-holes in adjacent panels axially align when the sleeve is collapsed into a flattened condition, thereby facilitating the stacking of used sleeves onto posts for subsequent cleaning.

The upper rim of the body is spaced apart from any of the gas-permeable material, such that the cover can be peeled away from the upper rim to expose the opening while leaving the gas-permeable material intact.
