A combination oven using non-caustic detergent during a cleaning wash cycle, along with the addition of a catalyst regeneration cycle after a predefined number of cleaning wash cycles, can regenerate the catalyst to restore nearly full function of the catalyst and removes most occlusion of the pores of the catalyst that occurs during oven cooking and cleaning wash cycles. The catalyst regeneration cycle includes a rinse agent cycle followed by a high temperature dry out and burnout step.

Cooking oven with steam generator inside cooking cavity

A cooking oven has a cooking cavity and a steam generating system. The steam generation system includes a water reservoir received and support in a reservoir-receiving space of a reservoir rack inside the cooking cavity. Thermal energy is provided to the water reservoir by a heater inside the cooking cavity. The heater can include thermal block made of a thermally conductive material in thermal communication with a heating element. The heater can be positioned such that it intimately contacts the water reservoir to deliver thermal energy thereto to convert water contained therein to steam, which can be used to cook a food item inside the cooking cavity.

An embodiment of the present disclosure provides a toaster oven including: a cooking chamber; an air passage; and a fan. The cooking chamber includes a side wall and a top wall. One of the side wall and the top wall is provided with an air inlet in communication with a cooking space of the cooking chamber. The other of the side wall and the top wall is provided with an air outlet in communication with the cooking space. The air passage between the air inlet and the air outlet is disposed outside the cooking chamber. The fan blows air from the air inlet to the air outlet through the air passage.

The cooking or baking oven can also include a damping system having a damper lid coupled to the flue, the damper lid moveable between an open position and a closed position, the damper lid in the closed position covering the opening; a damper motor; and a damper arm coupled to the damper lid and the damper motor, the damper motor rotatably moving the damper arm to move the damper lid between the open and closed positions. An air-based fryer apparatus (100) includes a shield (101) for use in a cooking apparatus (100), the cooking apparatus having a food preparation chamber (102) to receive a food support (103), a system (104) for circulating a flow of hot air inside the food preparation chamber (102) and a heating element (105) to heat at least the circulated air. The shield (101), disposed between the heating element (105) and the food support (103), comprises a plurality of inclined surfaces (112) and a plurality of apertures (111) between the inclined surfaces (112) through which the flow of hot air can pass. The inclined surfaces (112) block a direct line of sight through the apertures (111) in the shield (101) from the heating element (105) to the food support (103) to prevent air flowing from the food support (103) to the heating element (105) through the apertures without being deflected by the inclined surfaces.

Cooking oven power modulation system and method

A method and arrangement is provided for setting a peak operating power level for an oven having an oven compartment, a user interface, and a controller having a memory with a maximum peak operating power level stored therein. The method includes the steps of displaying an oven set-up user interface window on the user interface during an initial start-up of the oven; in response to an input for selecting a maximum output for the oven, displaying a maximum output user interface window on the user interface. Further, after input of a peak operating power level, the method stores the peak operating power level in the memory and selectively provides a power control signal to generate heat that corresponds to the peak operating power level. The oven is either an electric oven or gas oven. In operation, the oven heats at the peak operating power level, which is less than the maximum peak operating power level.

An embodiment of the present disclosure provides a toaster oven including: a cooking chamber; an air passage; and a fan. The cooking chamber includes a side wall and a top wall. One of the side wall and the top wall is provided with an air inlet in communication with a cooking space of the cooking chamber. The other of the side wall and the top wall is provided with an air outlet in communication with the cooking space. The air passage between the air inlet and the air outlet is disposed outside the cooking chamber. The fan blows air from the air inlet to the air outlet through the air passage.
