Impingement oven

An impingement oven (40) includes an upper housing structure (46) forming the exterior of the upper half of the impingement oven and a lower housing structure (48) to mate with the upper housing structure. An interior impingement housing (62) is positioned interior to the upper and lower housing structures (46) and (48). A conveyor (60) extends through the interior impingement housing (62). The inside surfaces of the upper and lower housing structures (46) and (48) cooperate with the interior impingement housing (62) to define upright supply chambers (80a) and (80b) on opposite sides of the impingement oven to direct cooking medium downwardly upon the work products being carried by the conveyor and also upwardly through the porous belt of the conveyor, thereby to thermally process the work products being carried on the conveyor.

Impingement oven

An impingement oven (40) includes an upper housing structure (46) forming the exterior of the upper half of the impingement oven and a lower housing structure (48) to mate with the upper housing structure. An interior impingement housing (62) is positioned interior to the upper and lower housing structures (46) and (48). A conveyor (60) extends through the interior impingement housing (62). The inside surfaces of the upper and lower housing structures (46) and (48) cooperate with the interior impingement housing (62) to define upright supply chambers (80a) and (80b) on opposite sides of the impingement oven to direct cooking medium downwardly upon the work products being carried by the conveyor and also upwardly through the porous belt of the conveyor, thereby to thermally process the work products being carried on the conveyor.

Continuous Mode Conveyor Cooking Utilizing Hot Air Jet Impingement and Microwave Energy

A continuous mode conveyor cooking appliance utilizing hot air jet impingement and microwave energy for cooking prepared foods. The approach envisions a central microwave unit with a hot air jet impingement oven unit on each side of the microwave section and a conveyor system to carry the food items completely through the appliance from one end to the other and with the two hot air jet impingement ovens equipped with a designed combination of hot air jet impingement jets and solid pins to act as a microwave attenuation system to reduce microwave exposure to cooking personnel to completely safe levels.

During peak-loads, the current draw of the heating elements may exceed available power of a power supply. Therefore, a system and method to reduce the total current draw of the plurality of heating elements is provided. The system includes a controller configured to perform the methods disclosed herein. The methods effectively lower the total current draw by rapidly cycling a plurality of relays connected to each of the plurality of heating elements to achieve even distribution of heat and reduced current draw during peak-loads.
