Perforated plate for meat grinding reclamation system
A meat grinding reclamation system is disclosed herein. The system uses a plate having a plurality of holes through which meat is processed, and a smaller number of waste material indentations that feed waste material away from the meat into separate uniform curved openings. The center of the plate is provided with a shaft opening, which allows use of a center drive shaft across the plate.
Process and apparatus for rapid preparation of dry sausage
A process for manufacturing dry sausage. The process includes preparing a dry sausage meat mixture, stuffing the mixture into a casing or mold, fermenting the mixture, heat treating the mixture, cooling the mixture to a temperature sufficiently low to permit slicing, slicing the sausage, placing the sausage onto a conveyor, and passing the conveyor and sausage through a chamber. The process also includes introducing a supply of conditioned air into the chamber, the air having a relative humidity below about 60% and a temperature in the range of at least about 40 F. to 130 F., and introducing a supply of microwaves into the chamber. The air supply and microwaves are selected to reduce the moisture content of the meat to a predetermined moisture to protein ratio.

IMPROVED METAL SURFACES ANTI-RUB APPARATUS
Apparatus for the anti-rub of metal surfaces involved in the process for processing vegetables, flours and preferably for processing animal meat for producing sausages, including, in sequence along the axis (100), an actuation shaft (200), a loading hopper (70), at least one auger (1) adapted to transport the animal meat to be processed; at least one first knife (11), preferably a plurality of knives (11), rotary and arranged at the outlet of the meat from the auger (1); at least one first fixed drawing disc (3), the first disc (3) having a plurality of holes and having the actuation shaft (200) at least one cylindrical projection (300), arranged along the actuation shaft (200), provided with at least one circular bearing (40), preferably a pair of circular bearings (40) adapted to stabilize and reduce the forces acting on the actuation shaft (200).
Meat Shredder
An apparatus for shredding meat with a hopper and a frame. The hopper has upper and lower rotor assemblies mounted to rotate horizontally within a shredding region. Each rotor assembly is composed of an arbor and fingers arranged in paraxial rows around the arbor. Four rows of pegs extend horizontally into the shredding region. A front row and a back row are each 0.75 inch above and below, respectively, the upper rotor assembly. A back row and a front row are each 0.75 inch above and below, respectively the lower rotor assembly. The hopper is suspended in the frame, which houses the drive mechanism that rotates the rotor assemblies in opposite directions. The upper rotor assembly pushes product dropped into the shredding region into the upper back row to shred the product. The lower rotor assembly pushes the shredded product into the lower front row to further shred the product.
Food processing monitoring system
Food processing monitoring systems and method thereof are provided. A method includes obtaining first temperature data from a first temperature sensor at an inlet of a food processing machine; obtaining second temperature data from a second temperature sensor at an outlet of the food processing machine; obtaining current data from a current sensor that is configured to measure current of a motor of the food processing machine; determining presence of food product at the inlet based on a peak current, of the current data at a time the motor starts, being greater than a first current threshold; and logging a temperature of the first temperature data based on the peak current being greater than the first current threshold.
PROCESS AND APPARATUS FOR RAPID PREPARATION OF DRIED SAUSAGE
A process for manufacturing dry sausage. The process includes preparing a dry sausage meat mixture, stuffing the mixture into a casing or mould, fermenting the mixture, heat treating the mixture, cooling the mixture to a temperature sufficiently low to permit slicing, slicing the sausage, placing the sausage onto a conveyor, and passing the conveyor and sausage through a chamber. The air supply and microwaves are selected to reduce the moisture content of the meat to a predetermined moisture to protein ratio.
Meat shredder
A meat shredder comprises a main cylinder, a driving body and a shredding mechanism; the shredding mechanism is installed in an interior of the main cylinder and driven by the driving body; the shredding mechanism comprises a main rod body, and an outside of the main rod body is fixedly provided with no less than two groups of shredding rods; an outside of each shredding rod is provided with screw threads. The invention realizes that the meat placed inside the main cylinder is shred rapidly through cooperation of the shredding mechanism with the main cylinder and the driving body; the overall structure is relatively simple and the volume is small, which can well meet use of a family; the installation of shredding rods with screw threads on the main rod body of the shredding mechanism can realize that meat can be quickly broken into into shreds.
Mincing machine
A meat grinder having a screw conveyor, a blade journal mounted on the screw conveyor in a rotationally fixed manner, and a cutting set. The cutting set includes a perforated disc which is supported in a stationary manner on the meat grinder housing and a blade which is mounted in a rotationally fixed manner on a supporting portion of a blade journal. The blade journal is inserted in a bearing bore of the screw conveyor. An insertion end of the blade journal protrudes from the supporting portion in a radial direction, and a stop surface is located between the insertion end and a circumferential side of the supporting portion. A fastening ring is pushed over the supporting portion of the blade journal to the stop surface and can be connected to the screw conveyor, thereby achieving a detachable connection of the blade journal with the screw conveyor.
Manual meat grinder
A manual meat grinder is provided. The manual meat grinder includes a bottom cover and an upper cover. The bottom cover includes lower grinding teeth disposed at intervals, and the upper cover includes upper grinding teeth disposed at intervals. The upper cover covers the lower cover and is rotatably connected to the lower cover, so as to grind meat through cooperation of the upper grinding teeth and the lower grinding teeth. At least one of the bottom cover and the upper cover includes blocking components disposed at intervals, and the blocking components are correspondingly disposed at at least one of a periphery of the lower grinding teeth and a periphery of the upper grinding teeth. In this way, meat is prevented from moving toward edges of the manual meat grinder in a meat grinding process, so as to improve a meat grinding effect.
