SYSTEM AND METHOD FOR PAUSING OR TERMINATING A SMOKING PROCESS OF AN INDOOR SMOKER
An indoor smoker includes a cabinet including an exhaust duct, a smoking chamber, a firebox, and a bypass duct extending between the firebox and the exhaust duct. The indoor smoker further includes a system of dampers and check valves to regulate the flow of smoke and air within the indoor smoker. A controller may regulate these features to terminate a smoking process by asphyxiating the combustible material and evacuating the smoking chamber, to pause a process by evacuating the smoking chamber while permitting bleed air into the smoldering chamber, or to continue a normal smoking operation.

INDOOR SMOKER WITH SMOKE CONTAINMENT FEATURES
An indoor smoker includes a cabinet defining a discharge vent, a smoking chamber having a chamber outlet, and an exhaust assembly including an exhaust duct and a recirculation duct providing fluid communication between the chamber outlet and the discharge vent. An air handler urges a flow of smoke through a catalytic converter positioned within the exhaust duct to lower volatile organic compounds prior to discharging the smoke. A recirculation port may be defined between the recirculation duct and the exhaust duct upstream of the catalytic converter and a damper may direct the flow of smoke through the recirculation port when the smoke contains unacceptable levels of volatile organic compounds.
SMOKER SYSTEM
A smoker system (1) for foodstuff, comprises a smoke generator (2), and a smoke chamber (3). A conveyor line (4a, 4b, 4c) is configured to transfer a continuous feed of the foodstuff through the smoke chamber (3) from a smoke chamber entrance to a smoke chamber exit. Preferably the smoke generator (2) is arranged outside of the smoke chamber (3) and connected thereto by a smoke conduit (8a, 8b).

A smoker system (1) for foodstuff, comprises a smoke generator (2), and a smoke chamber (3). A conveyor line (4a, 4b, 4c) is configured to transfer a continuous feed of the foodstuff through the smoke chamber (3) from a smoke chamber entrance to a smoke chamber exit. Preferably the smoke generator (2) is arranged outside of the smoke chamber (3) and connected thereto by a smoke conduit (8a, 8b).

COCKTAIL SMOKER
A smoker for imparting a flavor to a beverage is described. The smoker includes a support configured and dimensioned to be supported atop a lip or rim of a beverage glass, the support including a through-bore defined therethrough. A plug is provided, configured and dimensioned to be retained within the through-bore. The plug includes a recess defined within an interior of the plug and at least one outlet defined within the at least one plug side wall whereby an interior of the recess is placed in fluid communication with an exterior of the plug. Methods for use of the described smoker for imparting a flavor to a beverage are described.

AIR QUALITY MONITORING SYSTEM FOR AN INDOOR SMOKER
An indoor smoker includes an exhaust duct and an air handler fluidly coupled with the exhaust duct for urging a flow of smoke from a smoking chamber, through the exhaust duct, and out of a discharge vent. A catalytic converter is positioned within the exhaust duct, the catalytic converter comprising a catalytic element and a catalyst heater, and an air quality monitoring system is operably coupled to the exhaust duct. A controller is configured to measure an air quality of the flow of smoke passing through the exhaust duct using the air quality monitoring system, determine that an emissions control failure has occurred based at least in part on the air quality, and stop the flow of smoke in response to determining that the emissions control failure has occurred.
