Cold Smoke Generator
A cold smoke generator, also referred to as smoker, in particular for smoking foods like meat, fish, vegetables, etc., can be operated individually or in conjunction with a grill, in particular for use outdoors and indoors. The cold smoke generator includes a metal tube with a combustion chamber, an air supply, and an outlet for smoke. The metal tube is arranged in a stand in a lockable manner.

The present invention relates to an oven comprising: ?a first and a second chamber and one heater per chamber to heat a gas which cooks a product, ?at least one gas circulation means, which establishes a gas circulation in one chamber, ?endless conveyor means for transporting products from an inlet through the chambers to the outlet, wherein the conveyor means are at least partially arranged in a helical path, ?separation means to separate the first and second chamber, wherein the conveyor means pass through the separation means, ?natural smoke gaseous supply which supplies gaseous smoke to at least one of the chambers, wherein the smoke supply is provided upstream from the circulation means.

Smoker Gun
A smoking appliance in the form of a smoker gun. The appliance includes a major body portion (111) that releasably receives a barrel. The barrel provides an air flow passage that extends from an inlet opening to an outlet opening. Mounted in the barrel is a combustion bowl having an opening through which smoke is delivered to the air flow passage. A motor and impeller driven thereby causes air to flow along the air flow passage.
Smoker Gun
A smoking appliance in the form of a smoker gun. The appliance includes a major body portion (111) that releasably receives a barrel. The barrel provides an air flow passage that extends from an inlet opening to an outlet opening. Mounted in the barrel is a combustion bowl having an opening through which smoke is delivered to the air flow passage. A motor and impeller driven thereby causes air to flow along the air flow passage.
Cold Smoked Meat Product and Method of Making Same
The present disclosure relates to a flavored jerky product and a method of preparing a flavored jerky product. The method comprises applying a curing agent to an external skin surface and/or an exposed muscle surface of a meat source, curing the meat source with the curing agent, and drying, cold smoking, and drying both the external skin surface and the meat source. The meat source is then chilled, the external skin surface is removed, and the meat source is sliced and/or segmented into a meat portion. The meat portion is marinated in a marinade solution, and then dried, cold smoked and dried to attain a water activity between about 0.7 and about 0.9 to produce the flavored jerky product.
PRESSURIZED SMOKER FOR COOKING
Disclosed are methods and apparatus for smoking food such as meats, under pressure. In many examples, the source of pressure, and some heat, will be an internal combustion engine; with the exhaust from the engine communicated to a pressure chamber in which the meat or other food is placed. A separate heat source will be associated with the pressure chamber to provide increased temperatures within the pressure chamber. In some examples, the heat source can be a gas flame source, such as either propane or liquid natural gas.

FLAVORING DEVICE
A method of controlling the operation of a flavoring device (200; 400; 1000) associated with a cooking chamber (315; 515) of a cooking oven (100; 100) for treating food stored therein is proposed. The flavoring device (200; 400; 1000) comprises at least one casing (205; 1003; 1006), at least one air path (600; 700; 1061; 1064) traversing said casing (205; 1003; 1006) and fluidly connecting at least one air inlet opening (210; 1012b; 1036) of said casing (205; 1003; 1006) to at least one air outlet opening (270b, 270c; 1030b; 1045b) of said casing (205; 1003; 1006). The method comprises: a) providing one between a flavoring substance (610; 1063) and a smoking substance (710; 1066) in said at least one air path (600; 700; 1061; 1064); b) selecting (920) one between a flavoring process and a smoking process, and c) controlling (930-950, 960-970) a heating in said casing (205; 1003; 1006) according to the selected one between said flavoring process and said smoking process.
FLAVORING DEVICE
A method of controlling the operation of a flavoring device (200; 400; 1000) associated with a cooking chamber (315; 515) of a cooking oven (100; 100) for treating food stored therein is proposed.
